Thank you! I love to cook with as much flexibility as possible and cooking from scratch gives you the most freedom to do so, but it can be too tedious for some folks. Trust me, I don't always cook from scratch at home, but its nice to have the availability to do so. Glad you enjoyed the recipe!!

I have never seen anyone make Ricotta before. It was so interesting. A lot easier than I would have thought. It really makes me think about a lot of things I buy pre-made that might not be that hard to make myself. I have never been a huge lasagna person but that looks pretty delicious, my husband might eat it too.

Great recipe man! That deep fried lasagna pasta actually looks a lot like a treat we have here in Brazil called pastel! They traditionally sell this at farmer's market, and it's usually stuffed with cheese and tomatos or minced meat, then deep fried. And they add cachaça (a kind of brazilian run) to the dough to make it even crispier. I love your channel man! Greetings from your fellow cook from Brazil! :)

Rachel really does deserve a million subscribers and more, I've been following her videos for a while and I LOVE how well made they are - I really appreciate a youtuber investing a lot of effort in a video instead of just sitting down and talking to a camera (which is nice every once in a while as well). Watching you - specifically you - make lasagna of your own from scratch, without a recipe - inspired me to make my own for the first time. With a few of my own ingredients, in my own way mind you. But it was the first time I'd made a dish completely of my own, without a recipe to guide me, just making choices as I went along. My family and I so enjoyed it! I've enjoyed cooking for about 5 or 6 years now. But that was a rare moment when I felt such pure pride in creating something that was mine. Thank you, Mr. Talbott, sir. For helping me to find a new level of enjoyment and adventure in cooking :)

Hello Byron :) a little tip for the bolognese sauce (called also ragu'), in Italy we start with oil and celery+carrot+onion and then we cook the meat. We both use the tomato paste and tomato sauce and we let every reduce so it's thicker and perfect for lasagna :) love the way you made the fresh pasta!! Very authentic :)
