Great ideas for the stuffings. When I was a teenager I worked as a prep cook and we would do hundreds of these. We would mix the potatoes, bacon, sour cream, cheese and chives together. Put back in the skins and finish off in the oven. They were amazing.

Very interesting way to cook them. I never hard of deep frying them. Usually they are cooked in the oven. Will have to try this out.

I’m not Hispanic but if anyone could do a goat recipe on the grill it’d be you. I know the average Gringo, like me, would be hesitant try something they’ve never eaten before but after attending a Christmas party that some friends I had (who also owned a Mexican restaurant) I have to say that it was delicious. The cow tongue was also the most tender beef I’ve ever tried. If you do a goat video you’ll be the G.O.A.T! Thanks for the video!

Well, I knew I shouldn't have let my husband watch this video, lol. Now I have to run to the store for Chorizo and pepper jack. I like the idea of lightly lining the potato with refried beans. We'll be doing ours on the Treager tonight to get a light hickory smoke to them also. Can't wait, great video , thumbs up!

To maintain the texture, I'd say maybe an hour or two. Longer and you could refrigerate them and bring them back up to temp with a quick burst in the microwave before filling and grilling them :)

I think you could brush a little olive oil on them and place them in the oven under the broiler to crisp them up. But, it will be a different texture and flavor from deep frying...it will be totally edible though!
