Crispy pata na malutong at masarap na ulam at pulutan.
Ingredients:
1 whole pork leg
1 tbsp whole peppercorn
2 pcs bayleaf (Laurel)
1 piece star anis
Salt
Vinegar
6-8 cups water
Oil
Procedure:
1. Prep pork leg, remove unwanted hair if any. Washed thoroughly.
2. Transfer pork leg to a pot, pour enough water.
3. Add aromatics, laurel, star anis, etc.
4. Boil for about 1 1/2 hour to 2 hours, depending on the size of the pork leg.
5. When tender, remove from the pot. Let it rest.
6. Pour or brush skin with vinegar. Put salt all over the leg.
7. Air dry for 3 hours or refrigerate for atleast 1 hour to reduce time of waiting.
8. In a pan, heat enough oil.
9. Put pork leg gently into the pan then cover to prevent oil from splashing.
10. Cook until crispy and browned.
11. When crispy and browned, remove from pan.
12. Enjoy!
