I've seen lots of chefs do this dish, but this one by far is the most attractive looking one.

chefalc Hi. A well seasoned cast iron pan will work well also. A regular saute pan will make the process difficult. Thank you for watching!

"Is it possible to do this without a nonstick skillet?" The traditional Pommes Anna is made in a copper cocotte, so yes, it can be done without a non-stick skillet. You just use a LOT of butter. A non-stick pan, though, will make it a lot easier.

This looks good, but it's not really Pommes Anna. Pommes Anna is baked, and is a thick, pressed cake. It's normally 6 to 8 inches in diameter and 2 inches thick with many layers. This manner of baking gives it a crisp outside with a soft interior.
