This is my favorite place to escape to now... I love all of the background sounds, the slow rhythm of the whole process, from beginning to end. For the people that wish they would speak, I think by NOT speaking, we can all claim them as ours! No language needed, just love being served up. Oh I'm sorry I don't quite know. I just eyeballed it. Looks like it's about even amounts of mashed potatoes and semolina. You'll be able to tell if it's not the right combo bc it won't stick together right. Best of luck!

Semolina is very finely ground winter wheat flour. Also important in these flour or semolina recipes is that you let the flour rest. You'll notice when they put the lid on their mixtures and they let them rest. I would say to not rest any less than 20 minutes. That resting has to do with the gluten whether it's coating chicken, deep fry, pancake mixtures, bread or crusts. If you do not allow the flour to rest, the gluten in the flour (its binding agent which promotes elasticity) will not relax and cause it to burn without cooking properly.
