It is a soft shell turtle alright , but the main shell is still hard , grant it , not near as hard as a tortoise's shell. I do believe the sound track is not dubbed. What we hear is the actual crunching of the shell plus the bones also. How do I know ? I was from China, and I used to eat them often. The outer skirt of the shell is soft and the texture is legamentous, tenuous and gelatinous after cooking , we used to make stew out of the these types of turtles.
