It's a stupid way to crack eggs as it just adds another dish to wash. I've also seen videos of him cracking it this way only to pick it up and have some of the egg whites fall out of it. There's absolutely nothing wrong with cracking it there old fashioned way.

I wrote up the recipe: Choloate Chip Croissant Cookies Ingredients: Brown Salted Butter - 10 tbls Brown Sugar - 1 cup White Sugar - 1/4 cup Egg - 1 Vanilla - 1 tbls Flour - 1-1/4 cup Salt - 1/4 tsp (for baking) Salt - to taste (for topping) Baknig Soda - 3/4 tsp Cinnamon - to taste Choloate Chips - 1/2 to 1 cup Directions: Make 10 tblspoon of brown salted butter. Mix the brown butter with 1 cup of brown sugar, and 1/4 cup of white sugar into a bowl. Add a tablespoon of vanilla and one egg. Add 1 1/4 cup of flour, a 1/4 teaspoon of salt, and 3/4 teaspoon of baking soda. Add some cinnamon. Add your chocolate chips then refrigerate for 30 minutes. Cut the (pre-made circular) croissants in half (or use raw croissant dough) and put about 2 to 3 tablespoons of cookie dough on the inside and then 2 tablesp on top. Cook at 350° for 13 minutes. Sprinkle salt on top, then let cool for 5 mins before serving.

Try making your brown butter with unsalted butter. It foams a lot less which makes it easier to see the color transition to brown.
