I think the video pretty much covers the recipe; you could use another red wine if you do not have port on hand. I paid $5.15 for two steak of pretty equal size, everything else I already had and was a sunk cost so I figure $2.50 a serving.
The sodium -- 238 mg comes entirely from the Red Boat I added, one teaspoon. So long as you are using Dashi, and if you are on an obsolute salt-restricted diet you could leave the fish sauce out.
Well, there, I used sodium and salt in the same sentence. Shame on me. Please know that table salt (sodium chloride) of whatever variety, is about 40% sodium. Questions? Hit me in the comments.
