Crunchy Nachos That F@*K! | Cookin' Somethin'

INGREDIENTS
1lb ground beef, 85/25
1 jar salsa
1 packet Old El Paso Taco seasoning
1 jar salsa verde
1-2 bags high-quality tortilla chips
2 bags Colby jack, or other marbled cheese
Pickled jalapenos
1 can sliced black olives
1 jar green olives
1 bag of baby peppers
Sour cream
Limes
Tomatillo
Tapito Salsa Picante
Jalapeno Cholula
COOKING METHOD:
1. In a large pan over high heat, brown the ground beef. Once browned, add in ½ cup of salsa and a packet of Old El Paso taco seasoning. Stir until incorporated.
2. On a rimmed baking sheet, cover with a thin layer of tortilla chips and a sprinkle of shredded cheese. Add another layer of chips followed by a little amount of taco beef.
3. Add dollops of refried beans across the chips, cheese, and beef followed by a sprinkle of black olives, green olives, pickled jalapenos, and sliced baby peppers, and cover with shredded cheese.
4. Add to a preheated oven set to 450F. Bake until the cheese is melted.
5. For the dips, add sour cream to the back side of a bowl followed by tomatillo, green verde, salsa picante, and a fresh squeeze of lime juice.
6. Serve and enjoy!

I actually made this recipe for a Super Bowl party this past weekend. They got crushed by 4 people. The guy hosting the party made an entire beef tenderloin that was fantastic, and people were actually more into the nachos. Ok, Matty. I've been making my macho nachos pretty much like yours for years--BUT!--dammit, you showed me something new. I've had them get soggy because I was adding my wet ingredients while building my nachos instead of doing the dippy bowl. I also add my refried beans in with my meat as I'm browning it, along with a small can of chopped green chiles and some worcestershire sauce, cumin, garlic powder and chile powder (your package of taco seasoning). I'm going to build mine like you did this next time I make them and do the wet stuff on the side in the bowl. Also I add chopped green onions to top mine off at the end, and you are absolutely correct about the black olives on nachos--they are the chef's kiss.

Usually I'm against using pre-made flavourings or spice mixes but I have to say, those Old El Paso seasoning packets (both the nacho and taco ones - pretty sure they're the same) are GREAT for that american style non-authentic mexican taste. So tasty, and they have step by step directions to make it the same way every time. No messing about. I love cooking from scratch, but sometimes I just want a big ol' bowl of cheated taco beef to spoon into premade torillas.
