Matty, in my eyes, this dish makes you an honorary Asian. Chinese/Taiwanese people make this almost 1:1, but with sesame paste. It’s called Dan Dan Mian. And a little kick of toasted, ground Sichuan peppercorn at the end makes it truly authentic. Fun fact, when my parents immigrated there wasn’t any tahini or sesame paste to be had, so my dad had to make do with Skippy peanut butter when I was a kid. He’s the best home cook I know.

Ok here you go.............Two things of Ramen noodles Oriental best flavor. Follow directions to the end.......then pour out 1/2 of the liquid and put two thin sclices of cheddar and three slices of American cheese. Then cover with plate so no heat escapes......3 minutes later the cheeses are all melted together clinging to the noodles and it all mingled with the noodles to make a noodle feast for the taste buds.
