I know this is an old video, but can't help to comment on your strategy in crusades. I think the right thing to do is split the army into one small with siege engines and some 1.5k levies and the rest. Small one should siege and large one should wait to join battles that need tipping the scales in favor of crusaders. Otherwise it can last painfully long as each battle lost drains forces and lowers the score.

But the AI is in charge of both sides, so... anyways unorganized crusader armies working poorly together was basically the whole of the crusades.

There is no reason why this crusade should fail, its all the AIs fault.
