there's a call "n1 stablize, toga" stablizing engine before set takeoff thrust to prevent thrust asymmetry probs

Not only thrust asymmetry but you want to make sure the engine works- there’s no runup on airliners, so for example ice on the blades might ruin you day, so you want to be sure everything is working.
