Hi From 🇸🇬 Singapore. Beetroot to colour Puttu is a good idea as the world over people are moving away from food colouring.Good idea to explore other natural colouring from other foods...One good one is "SANGU POO" or Purple Pea flower, for purple colour, which is often used in desserts etc in South East Asia. Nice demo of the mushroom cooked on the steel sauce pan. One thing to note is some sellers of heavy or totally S.steel pans have a silicon "tube" like, removable insert, over the handle to hold it, as heat transfers to the handle while cooking. Maybe some hardware shops will sell those. Also the not- so-spicy "Saute" style cooking of the mushroom is a great addition for meals where spicy gravy is served, to add some balance. (NOT all dishes served have to be spicy). sliced "Champignon"..or button mushrooms is great... it will be great if you can explore the various types of Mushroom available..like bigger "Portobello" etc and different ways to cook them based on South Indian dishes.
