One thing I learned from working in kitchens is that although you don't like something or you have a dietary habit outside of an allergy, you should get in the habit of trying foods so you can get an idea of the flavor and whether it tastes right.

@culinaryinstituteofamerica4 жыл бұрын
The CIA is a fully accredited college, so all students are required to have a minimum of a high school diploma or have completed their high school equivalency in order to attend. We do not require restaurant or culinary experience prior to beginning the program, however, it is definitely encouraged. As well, we take a holistic approach to reviewing all applicants, meaning we are looking for well-rounded students who have a strong passion for the food industry and are looking to become future leaders in that industry. @lunch72137 жыл бұрын
For many people it is. However, the school has a good approach on reducing stress to somewhat manageable levels by gradually moving you through each class, gradually acquiring skills to be used later on. One chef here taught me that the first year is like grade school for a kid. What you learn in second grade stems off from first grade, and so on. The only problem is that here you're doing so in such a short time frame. Aside from the starting cooking course, the other cooking classes are only 3 weeks long, not giving students a great amount of time to fully understand and appreciate all the skills they've learned

The CIA takes a holistic approach to reviewing applicants, meaning that we look at the entire student and not just one specific area when making our admission decisions. While academic achievement is certainly an area of focus for our review committee, several other areas are taken into account, including foodservice experience, passion for the industry, well-written essays, and strong letters of recommendation. Do not let your GPA discourage you from completing your application. You may be surprised by the outcome. Furthermore, there are plenty of options for students who may not be admitted their first time applying to the college. One or two successful semesters at a community college that show growth and academic improvement can not only get you admitted to the college but can also award students transfer credits for a number of general education classes (which will save money). If you have more questions, feel free to contact us at 1-800-CULINARY or admissions@culinary.edu.

Hello, Thanks so much for your comment! Our hands-on culinary curriculum covers all areas of food, including extensive work with plant-forward diets and cookery. With that being said, animal proteins and by-products will definitely be a part of the program. Students are never required to taste or consume any foods that they have restrictions with, however, they will still be responsible for all of the material. Meaning that they will still need to be able to identify, butcher, and cook both animal proteins and animal by-products during the program. If you have additional questions you can contact someone in the Admissions Department at 1-800-CULINARY.

People need to realize what being a chef means. Line cooking for 10 to 14 hours a day. In a kitchen with an average temperature of 90 to 120 degrees sometimes. This place might teach you a lot of skills but the real world restaurant business is cruel and fast paced. So if you don't like to work hard all day then this is not for you.

Good ingredients? I've peeled more rotten or bruised onions in fundies than I can count. Chef just says to trim and discard the bad bits. The key is triaging produce. There's always a few bad onions in a 50 lb bag, so you learn to use the lower grade produce for applications where the condition does not matter as much, like stock for example.

Takes a lot more than school to do that... After spending almost $100k on school, you will need the same again to open a well equipped restaurant and at least 10 years of practical experience to know what you're doing. School is a start, but for a culinary education, it's a terrible one.

I once attended this school and I will say if this is your dream school be prepared to work hard. Not a warning but a goal to set for yourself.

I graduated from here... almost impossible to find a job. The industry is SUPER and I mean SUPER SUPER competitive. Not trying to scare you but be ready to take shit jobs at first. Like commie or chef de partie. Best of luck to you young buck! Get after it! 👊🏻
