OK we made this about 6 months ago and put the bottles in the fridge. We did not use sugar. We soaked glutinous rice over night and steamed the next day after it cooled I put the yeast balls, after about one week I added 1.5 liter of water for every kilo of rice .after about 40days I strained the rice and squeezed all the liquid from the rice with a cloth. From 3 kilo of rice I got 8liter of wine. As I said before we put the bottles in the fridge. Now 6 months later we tested the taste. IT IS SPECTACULAR!!! perfect for celebrating the New Year! In central China and Japan, people also make rice wine. We add a lot of jasmine flour cured in honey. We collect fresh jasmine and add them in honey for months until they are totally mixed. Then, mixing with the rice wine before fermentation (or after fermentation, I am not sure). It gives you a fantastic taste.

You can make sparkling wine from your homemade wine by adding a little sugar in the bottle before filling. Homemade beer makers sometimes use this technique to naturally carbonize their homemade beer. Then store/wait six weeks before serving. Research the correct amount of sugar to add, else your bottle could become over-carbonated and explode. If doing this method there will be residue yeast at the bottom of the bottle after six weeks. So pour carefully, and try to use smaller bottles like a beer bottle and share your wine. This method will not work using store-bought wine, cause there is usually no remaining yeast in a bottle of commercial store-bought wine.

This isn't real saki. He real.japanese rice wine doesn't have or has a special yeast added . This is simply using yeast to turn rice starches to alcolhol using yeast And there's alot better tasting sugars to ferment than rice sugars . The rice is used for the yeast and the sugars in real saki

No risk, this fermentation produces ethanol, CO2 and that's about it. Only risk is, if you don't do it right, you may get a horrible wine that will go down the drain.

A) Put the endproduct in the freezer (plastic bottle) and if it is frozen, release the cap and let half of that bottle drip in a bowl. Alcohol has much llower freezingpoint than water so you now what first comes out of the bottle ain't water.

Hey Buddy, today my 22 nd day completed,so I bottled it n tasted in just a little bit n came out little sweet n it has good taste of alcohol,but due to instant yeast it smells little like bread, anyway I kept it for decanting for now another 15 days hope it will get clearer just like ur one.....it's my first attempt of wine making, no more use of instant yeast next time.... except smell of bread taste is good...... will update the progress after 15 days....thanks dear friend 👍🏼😊

Hey dear friend, My pineapple wine is ready after bottling its 10 th day, I made it with bread Yeast n followed ur exact recipe. I tasted it came out nice it doesn't have the smell of bread as it was for rice wine, may be strong flavour of pineapple has over came flavour of bread😂😂 It has 6%ABV, I like it very much next try with wild Yeast for sure. thank you so much.. i made wine from wild concord grapes which grow around here and it came out really well.. my Priest Father Leo tried it and said it tastes like the wine he drank on Mount Athos in Greece.. i also just finished up another brew .. this time it was wild crab-apples with spices.. including juniper berries.. now i am thinking about startling another brew but use rice..i have some white rice mixed with wild rice here..i wonder if i should make some beer.. maybe add more juniper berries.. "i do like gin after all".. so what are your thoughts on that ?

@@radhindas1122 get a gallon jar full of the grapes ..wash them in running water..put them into a kettle and put on the stove top..bring that to a boil..add 6lb..white sugar...put into a 4 gallon carboy with airlock..add 2 tablespoons yeast and fill carboy up and leave head space in carboy...let work for about twelve days ..taste if still too sugary let go another day taste...let go until slightly acidic...bottle in canning jars...let sit in the bottom of fridge for a week ...enjoy

Check on the box until what % of alcohol this yeast can survive 😉 Next time if you use the same yeast you can try with half sugar 🙂

Hey thanks for your video. 8:43 no basement, can I put this into a refrigerator? In my place the temperature is around 29 °C to 41 °C and humidity extremely. Is there any certain temperature after pouring wine on that bottle reserving? Please let me know. Thanks again.

No sorry because the fridge is too cold 🥶 and better 29*C If it is too cold the fermentation will not start

Love to use rice wine or sake for cooking all kinds of dishes..... it's great on marinated chicken or any fowl really ....... but a shot or two is great as well and even add a shot to a hug jug of Mexican HORCHATA " RICE AND CINNIMON DRINK " ITS REALLY GOOD .

Hello The Master, 1. Bottoling the wine after 23 days we have to wait 15 days more, for what reason? 2. And when to add sugar to make it sparkling before or after fermentation specifically you genious suggest please in how many days after actually and you said .5 sugar to what measurement ? 3. Can we use ballon with holes instead of bubbler that you put in the mouth of the fermentator to emit carbondioxide?

Here in Laos I tried this with our own sticky rice. I choose your recipe because the wine looks so clear. Normally you would steam the rice. Nevertheless I followed the recipe and sofar the wine is still cloudy and very sweet. It tastes good. I filled some in an Champagner bottle and will wait some time.

I have used other yeasts for rice and it comes out extremely sour. This is because yeast alone cannot provide the enzyme which converts starch to sugar. Chinese yeasts are specialist mold yeasts for dealing with rice. You could also try normal yeast with ginger which also has an enzyme for converting rice, but I don't know if it works..

In this recipe there is a lot of sugar, if you add more the fermentation will not start. Same idea of fruit jam the sugar preserve the fruit 😉
