My last tray has just come out of the oven, they are soooooo tasty. They're not overpowering like some spiced biscuits and using these measurements I got 32 average size round biscuits from the dough. This is one to go in my recipe book, 10/10 will defo bake again :D

I was going to put 1tsp of pepper and 1 tsp of mixed spices but because I personally am not a big fan of pepper I only put half a tsp of pepper and 1 and a half tsps of mixed spice, but i think i could've got away with 2 tsps :) if that helps

The mystery sizzrrp is Golden Syrup but I think maple syrup would work. I nearly used treacle but bottled out at the last minute! They would be delicious but pretty intense and more like gingerbread cookies. Nommmm...

No its golden syrup (honey substitution) you may also use honey. It may not tasta as good though. Hope that helped 😊🙂😀.

They would. I sometimes use treacle instead of Golden Syrup (the mystery syrup). It makes them dark and intense. If you replace the mixed spice with ground ginger, take out the pepper and use treacle or molasses they become the best gingerbread cookies ever!

OK here. 1. Put an appropriate amount of spice. About a tbsp is fine. However, feel free to add less or more, because everyone has a different taste. 2. 100g butter. 3. 2 medium eggs. You're welcome.

If you want to make them in a free standing mixer I would try using slightly softer butter and then refrigerating the dough before rolling. Try that and see how it turns out. Let me know how you get on. Maybe they will be even better! x

The cold butter in the mixer might be a struggle. Perhaps try making this with slightly softened butter instead so that the mixer doesn't have to over mix to get the dough together. You might need to refrigerate the dough before rolling out though, to make it more manageable. Good luck!

Dear Jemma, Hugh Fan 😊 Please for the sake of the Bakers across the pond PLEASE, NOTE somewhere the measurements in Cups, Ounces or something American. Yes, I know there are conversion tables online. But when say 140 g and the tables will 130 g and then I get all mixed up. So sorry, my brain is old. 🤪 Other than that I absolutely love your show! I use a simple icing with just powdered sugar and a small amount of water and to colour I use liquid food colouring. The best part if you make it to runny add more sugar if to dry add more water very simple hope this helps

You can combine the powdered sugar with shortening and milk. 1/4 pound shortening to 2 pounds sugar and add milk to get the consistency that you desire. My mom has a cake decorating business and we use this one all the time.

+Rachel Porter I always chill mine for about 15-20 minutes before I use it: it just helps it firm up a bit for rolling, which helps if its a sticky dough

+JACQUELINE SARINGAN Self-raising flour and all purpose flour are NOT the same. Self-raising has raising agents in it, such as baking powder. This makes your cakes light and fluffy. It's important to use raising agents in your cake... these can be baking powder, baking soda or by whipping egg whites. If the recipe asks for self-raising flour, USE IT!! If you don't have self raising flour at home..... Just add 2 teaspoons of baking powder for each 150g/6oz/1 cup plain flour. Sift the flour and baking powder together into a bowl before using, to make sure the baking powder is thoroughly distributed (or you can put both ingredients into a bowl and whisk them together)
