I used this recipe to construct a gingerbread village. It’s perfect! It rolls out beautifully and the finished cookie is nice and strong for construction. The best part is the flavour of the cookie...DELICIOUS! Using golden syrup in place of molasses is a revelation. I also add a tiny pinch of cayenne pepper. Thanks for sharing this recipe!

You could do all the sides and ends, let them dry, then do all the roof pieces. You could also put names on the mini houses and use them at a dinner party or family Christmas dinner as the name plates.

made these as gingerbread men and they were a hit. Flavour is more on the milder side so if you dont like a really strong ginger flavour this is you go to. Super simple to make.

This was a great recipe! Our houses turned out great 😊 One thing I will say is that it was a tad sweet for my liking so I would recommend dropping a bit of the sugar off and kicking up the ground ginger if you don’t have a super sweet tooth 🦷

You can use burnt sugar as glue as well. It is much more stable and dries faster, but doesn't taste as good

Most people don't eat the gingerbread houses as they sit out for at least a few days. Not to mention, cookies made specifically for houses are very hard because they are essentially walls lol. I wouldn't worry about your family eating your house. As for eating cookies, you could just do any cut out cookie and decorate it.

Hi Gemma! I made mini gingerbread houses using your recipe and template today and it was delicious. However I noticed that in the video you say to use 2 rounded teaspoons of ginger but in the description box, it says 1 rounded teaspoon of ginger. I decided to use 2 teaspoons of ginger. Anyways, this gingerbread recipe was really good but I just wanted to point out the mistake so other people know.
