185g self raising flour
185g caster sugar
1/2 tsp baking powder
150g ground/bashed pistachio nuts
150g softened unsalted butter
1/2 tsp ground cardamom
3 large free-range eggs
125g plain yoghurt
Zest of 1 lime
Juice of 2 limes
125g caster sugar
75ml water

Made the recipe and baked in two 8 inch round tins, for a layer cake (for younger sister's birthday) with dark chocolate ganache...the whole house smelled divine while it baked... haven't cut the cake yet but the crumbs everyone tasted were amazing...pista favour was outstanding! Love u jemma for sharing such awesome recipes♥️♥️♥️🤗🤗

Very nice..isn't this the lemon drizzle cake!! Also for the syrup to get absorbed completely it's poured over right out of oven when it's hot..else it forms a kind of layer over the top..

Just want to come back and say thanks for the great recipe! Baked them today and it was delicious!! I cut down the sugar by 20 grams because I thought the recommended amount was a bit too much for my personal preference, also substituted one lemon juice for two limes since I don't have any at hands! Turns out still really amazing!

Great recipe, I love the combination of flavors. What would you advise about making this cake in advance? Can I finish it off? Or would it be better do add the sirup and nuts just before serving?

I love cakes that you then drench in a citrus syrup. I will definitely make that! But I think to really let it soak in the syrup I'll bake in a spring form and add the syrup when the cake's still in the form. I might get it out of the spring form more easily than a loaf form.

Hi Jemma, How do I get my cupcakes to be flat on top? Also, i live in Sydney Australia and it gets very humid in the summer, which frosting or icing is sustainable in this weather to ice cupcakes, cakes etc? Thanks

you don't have to remove the outer part of the cardamon seeds, it gives more flavor and scent if you blend it all. It was pretty sweet and rich without the lime. The flavor reminded me of middle eastern rice puddings (sheer berenj).

Fantastic flavor combinations. Great to have with a simple quality vanilla, pistachio or lime ice cream. For tea would a black tea go well with this? Yum!

Hi Jemma, Regarding the Cardamom pods - would it make much of a difference if i just ground the whole pods in a spice grinder, as opposed to using only the seeds? Thanks in advance!

Not really, it's actually an old middle eastern recipe. The only difference is that the lime syrup would traditionally be a rosewater syrup :)

Posting this for future me and others - because I don't have something to weight grams or self-raising flour \Recipe// Cake 1.28 cups flour 0.93cup (or 15 tbsp) caster sugar 2 1/2 tsp baking powder 1 cup & 2 tbsp ground/bashed pistachio nuts 2/3 cup softened unsalted butter 1/2 tsp ground cardamom 3 large free-range eggs 1/2 cup plain yogurt Sauce Zest of 1 lime Juice of 2 limes 10 tbsp caster sugar 5 tbsp water + 10 tbsp pistachios for topping

I loved the recipe . I ain't a lime cake fan but it turned out to be amazing ! I made it my healthy version using oats olive oil and stevia instead in ramekins and it was still scrumptious . Even my sister loved it :)
