🍪Cheese curd cookies
(calculation for 50 pieces)
Ingredients:
300 g flour (2/3 lb)
10 g baking powder (0.4 oz)
salt
150 g butter (1/3 lb)
350 g of cottage cheese (2/3 lb + 1.8 oz, 5% fat)
vanilla sugar (or vanilla)
150 sugar (1/3 lb)
🍪Prepare cookies:
1. Rub the cottage cheese through a sieve.
2. Combine the flour with the baking powder, salt and vanilla sugar and mix.
3. Grate the butter into the flour and mix to make crumbs.
4. Add the cottage cheese, mix until smooth, and knead the dough.
5. Wrap the dough in clingfilm and leave for 1 hour in the fridge.
6. Divide the dough into 4 portions, taking one, and return the remaining 3 to the fridge.
7. Roll out the dough 2-3 mm thick, cut out circles 8 cm in diameter with a round punch.
8. Dip each circle in sugar on one side, then fold the dough in half - with the sugar inside out. Dip the dough in sugar again on one side and fold again - with the sugar inwards.
9. Dip the resulting triangles in sugar on one side.
10. Place the cookies on a parchment-lined baking sheet, sugar side down.
11. Send to bake in a preheated 340F oven, top-bottom or bottom with convection, for 15-18 minutes.
