1 tbsp oil (avocado)
1/4 tsp methi seeds / fenugreek
1/4 tsp geera seeds / cumin seeds
1/2 onion diced
2 pimentos chopped
3 curry leaves
1/2 onion diced

2 tbsp mild curry
1 tsp turmeric
1 tbsp green seasoning
2 cups water
Enough water to cover
1/2 tsp geera powder to finish

In Trinidad we say Curry Channa and it's a Trini Channel so that will trump anything else.
