And the person cooking is a she, it's pretty obvious when watching her vlogs videos. No hate, just saying my opinion.
Hidamari-san is the best! She uses clean and simple tools in clean and minimalistic kitchen view, no distractions there. She has no jewellery on, uses gloves, is patient and thorough, and *_lets the food do the talking!_* Thank you so much Hidamari-san for cheering me up 💜

I made this beautiful pie using pears instead of apples, and ground almonds instead of cake flour in the pastry cream. Was divine! Pears and almonds are a good match.
That looks amazing! And your pastry dough looks and is prepared like puff pastry with less folding and rolling. Seems like a friendlier version of a puff pastry that I would be very willing to try. Absolutely beautiful. Lovely basket weave top. Reminds me of my grandmother's scrumptious apple and cherry pies. Thank you! 🍎🍒🥧

I made this pie today and it was absolutely phenomenal 😍 I added a little bit of cinnamon for it to fit my taste, I had some difficulties with the pie crust since my kitchen is wat to hot and when the crust get warm it becomes easy to tear, the custard was not to sweet and it really complemented the apples

Thanks for this tip! Although didn't she use the second half of the dough for the lattice top? That's what it seemed like to me. Still, you are on to something - I compared the total weight of this 15 cm dough to that of a pretty standard recipe for a 9" /23 cm double crust pie dough, and it comes to around 80% of the weight. So it does seem close to enough for double the size of pie! I did notice that she makes the bottom crust quite thick, so I wonder if that is part of the reason? I'll try and make it soon and see how much weight dough is leftover.

The recipe: First off do not punish yourself buy the puff pastry! I've never been able to it make when I've tried it. And there was a bunch of trial and error on my part. Do not use green apples they will turn to mush in this recipe. I found the honeycrisp and jazz apples to do very well. For the custard cream: 1 C Whole milk 1/2 vanilla bean or 1/2 t of vanilla 3 egg yolks 3 T cake flour 3 T cane sugar 1 t salt - mix the egg yolks, cake flour, salt and sugar till pale in a mixing bowl. - In a pot, you're going boil the milk and vanilla over medium low heat until it is it steaming. Temper the milk into egg mixture, slowly; put back into the pot to continue to cook till thick. Strain it with mesh strainer. Take Saran wrap and press it to the top of your custard so it does not develop a skin and cool it. You can make this ahead of time. Apple caramel goodness: 2 Apples cut and peeled 2 vanilla beans or 1 t vanilla 1/2 a lemon juice 4 T cane sugar 1 T + 1 1/2 t Water 2 T unsalted butter - put the apples in lemon juice - in a pot add the sugar and water over medium heat (do not stir) when there are big bubbles add the butter and then the apples without the lemon juice, then when the sauce thickens add the vanilla of your choice. Now reduce the then let cool. Crust: when you are working on it, it is important to keep the puff pastry cool it helps with the flaky 🤗 After you are done assembling and decorating the pie. You can do an egg wash which is about one egg yolk to 1 T water. Now the fun part if you have an oven that allows you to actually enter the temperature this will be easier for you. 392°F for 20 minutes then 356°F for 20 - 25 minutes * If you cannot get these temperatures on your oven, get it as close as you can. And keep an eye on your pie. You worked hard on it!!! Let it cool! Enjoy! I hope this helps you out.

Ingredients measured in cups (metric, for future reference, not exact but approximate amount, works well) PIE CRUST 2 cups all purpose flour 3/4 cups unsalted butter 1/2 cup + 1tbsp chilled water 2g salt (eyeball the amount from the video) CUSTARD CREAM 1 cup milk 1 tsp vanilla essence 3 egg yolks 3 tbsp + 2 tsp brown sugar 1 tbsp + 2 tsp all purpose flour APPLE CARAMELISE 2 apples Juice of 1/2 a lemon 1/2 cup cane sugar (don't use white sugar it won't caramelize with water and it will crystallize) 2 tsp water 2 tbsp unsalted butter GLAZE 1 egg yolk and 1 tsp water
