Just one thing, put butter in your puff pastry (in the dough but also between the layers, search for a French recipe of puff pastry), I think the result will be less dry and you'll get more layers (also you don't obviously need to do 6 simple turn). Don't get me wrong I love your channel, it gives me the chills every time. But I'm also French and making pastry on my own and it exists a lot of way for making puff pastry but everyone of them got butter between the layer, I think there's a reason for it. ^^ Anyway keep going, I love your work and your way of baking !

Look up a shortcrust recipe instead. Rough puff and puff take longer as the gluteus have to relax in between turns or it goes rubbery.
