I don't remember ever seeing you pre-ice the middle of things before (the letters in green icing on the white cookies with pink flowers). I've seen other people do it saying it helps prevent the icing from sinking in the middle, but I'm just curious why you did it on that set of cookies when you don't normally? I've never seen your icing sink in the middle so I'm wondering why you did it different than normal.
