I am 65 yo now, but was raised by a mother that did cakes out of our home. We always knew, as kids, to NEVER run in the house or slam the back door when we came in just in case mama had cakes in the oven! I spent hours watching her fold and prepare her parchment piping bags for an upcoming wedding cake. It was perfectly normal for our dining room table to have a huge wedding cake being constructed for a week! (from beginning to end) She made the most beautiful flowers and could literally make any kind that anyone asked for! I remember many young women thrilled to order her cake and then my mother would write it off as their wedding gift. Such beautiful, fond memories...God bless all who read this!

If you are using liquid egg Whites, REMEMBER to use PASTURIZED egg whites. You can get Pasturized eggs in the shell, but they are a little harder to separate than regular eggs, or you can buy pasturized egg whites in the carton. Pasturized eliminates the chance of salmonella. You can also use Meringue powder instead

@@debjudisch5548 there's much debate about using raw egg white in royal icing. Salmonella comes from the shell of the egg, not the white or the yolk. Theres research that has found that when using raw egg white for royal icing, once the icing dries hard the egg white is no longer able to harbor the bacteria that can make us sick. I've made thousands of cookies using raw egg white and have never had a single issue. The packaging and pasteurization process changes the chemical makeup of the egg white and I've never had luck with my icing whipping up using these products. I've found that the pasteurized egg whites make an icing loaded with tiny air bubbles that are impossible to get rid of. Hope you enjoyed my, 3 am, Ted talk 🤪

When loading pastry bag with frosting, I place the bag in a tall glass same diameter of the bag, that allows gravity to help frosting flow in, plus I can use both hands.

I usually don't like when ppl talk 2 much in tutorial videos, but every bit that she says is useful and I wanted to keep watching. Great tip on using a drop or 2 of White Color to give an opaque hue. I am an avid baker and never confident icing cookies, now I can't wait to try it! Im going to use carton egg whites that are pasteurized, that was not mentioned. Thank You GH 😊

I've watched about a baker's dozen ( 😉) of videos on cookie decorating. This is the best one for beginners, it teaches so many different techniques and isn't trying to show off skills, just pass on knowledge.

You can add some lemon juice if you’re worried about the egg whites. The acidity will help kill any possible lingering bacteria and it adds a nice flavor to the icing.

I really enjoyed! i like decorating cookies, but i have only done it once ( mainly because i can't eat the cookies) but now that i have a best friend, and she has siblings aswell, i can decorate cookies and bring them over to my friends house! when i actually GET the cookies and the iceing.................... Everyone else I've watched are not using a bruch to spread the icing but are pushing icing out of their tube then using a pink to move things around and finally are bounding the cookie to make it smooth...I LOVE the way Patti is using the brush and getting the same effect.

Such a great tutorial! I use merengue powder instead of liquid pasteurized eggs and I thin with water. I also use oil free almond extract to flavor.

Pampered Pets Pro Grooming Two question’s - I’m a beginner lol. 1) How can eggs be pasteurised without getting cooked? I’ve seen powdered merengue powder in Bulk Barn. 2) So you don’t use icing sugar at all, just this merengue powder and water? That sounds easier and you don’t have to shop for pasteurised egg whites. I like the idea of being able to make stuff without having to get out and shop. 3) How do you know if an extract is oil-free? Do they list the ingredients on the bottles? There are many extracts out there and experimenting with different ones would be fun. I’ve used orange essential oil in a recipe (made sure it was ok to do so) when I didn’t have an orange for zest and didn’t wanna go out in the winter to drive just for a couple oranges. It worked out fine. 4) Would using an oil containing extract affect the icing that negatively? Anyways, thanks for any advice. I’ve got chemo brain lol and learning I love gifting baking to people to say thanks. Cheers!

@@aremedyproject9569 i just wash my eggs with warm water I dont pasteurize them never have and have never had any issues. Salmonella, if it exists on an egg at all, lives on the outer shell. Clean your eggs before cracking and all will be fine. Just be sure to use and consume within a week, otherwise you need to use meringue powder.

Hello So I stopped the video to see what food coloring Patti is using. I believe it is AmeriColor which can be purchased on Amazon. You can get 12 colors in one kit. They may have more options available I am not sure, but this is a start.
