I have to say, a starter anime for more of a dark theme is berserk, it's very light on the gore, and it tends to lean more towards scratches than wounds but it's super good, I preferred the manga but you can watch the anime

Fully agree, except one thing - for Higurashi it's better to watch the old ones, instead of Gou and Sotsu. Or at least don't start watching the new ones without checking out the prequel, or you are going to miss out a lot of inside jokes. The art style may look less cute, but it's still very wholesome and will even teach you some interesting games, like Old Maid.
