Step by Step Recipe for making Gujarati Style Churma Laddu or Churma Laddoo from our beloved Baka Maharaj who has more than 50 years of experience in cooking in Marriage functions and other functions. He has shared his 21 valuable tips with us during the video. We are very grateful to him for sharing with us his recipe with us.
Recipe Steps:
1. Mix 2 kg Coarse Wheat Flour and 500 gm Laddu Besan well
2. Add 200 ml oil and mix well for about say 3-4 minutes.
3. Add about 1.25 litre water in parts slowly and mix flour to achieve Firm consistency of Dough. Dough should not be too soft. (Tip: Water should be lukewarm) (You may use milk also)
4. Make cylindrical shape Muthiya from Dough and fry them till it’s pink. (Tip: Don’t make it Brown)
5. Crush Muthiya with Mortar with Pestel (Khalbatta) (Tip:Crush Muthiya when it’s hot only. If you allow muthiya to become cold, Churma Laddu will become Chewy)
6. Sieve Muthiya with Wheat siever.
7. Grind remaining pieces after Sieving in mixer and again sieve it.
8. Add 1.5 Kgs of Grounded Sugar after sieving it.
9. Add Dry Fruits (Cashew, Raisins & Cardamom) & mix
10. Add 1.5 Kgs of Desi Ghee/Pure Ghee (Tip: Heat Ghee before adding i.e. add in liquid form.)
11. Mix Ghee first with Laddle and than with hands.
12. Try making a Laddu and check it’s firmness. (Note:If Laddu are not firm enough, add little Ghee & Milk)
13. Mix again and check firmness of Dough.
14. Make round shaped Laddu, rotate with hands and then thump it to give it a proper shape one by one.
15. Apply Poppy seeds to enhance the taste.
