At first glance his mandarin skills stands to most people, but when you get to know his deep knowledge of Chinese cuisine, he surpasses most native Chinese people. This should not come as a surprise as he has dedicated a whole chunk of his life to knowing how to make dishes from scratch like fermenting soy bean paste to using Chinese medicinal herbs. It takes a guy like this to teach the world about real Chinese food because his appreciation and knowledge goes beyond every people. As an Asian American, I see a dire need to pass the food from our parents and grandparents to our children. Kudos to this guy

I like the word “Courage”. Not just in Art, but in any disciplines, like I’m a woman engineer, also a young entrepreneur, Courage and authenticity are important factors that I always need to remind myself deep inside. 他开始就说了一句,生命的意义是什么,他在追求完美是一种满足,生命的满足,他在享受真正的人生,他的收获是丰富的文化,非常智慧,不像普通人只追求金钱和物质,这是我没看这视频已经感觉到的。我们经常后悔年轻的时候不懂,浪费了宝贵的光阴。

他好像也不是想表达正宗吧?而是对理想的执著 相对于courage 我倒觉得他找到的是the connection with ppl, that's what makes HIS food authentic 跟他本身是不是中国人关系不大 有一份对专业的坚持 对食客的真挚 和愿意在中国待这么久来整理自己与烹饪 与食物 与中餐之间的关系 大体上 已经可以让他成为一个很棒的中餐厨师了

Should it be understood as, it is not that others recognition that confirm your authenticity. it is you who define it. and eventually, people will know. There is no sign out there, there is no mark out there, to tell you, hey, this means authentic. So eventually it's you, it's your trying, your trials, your understanding, and your way of doing it, that marks the authenticity. at the end of the day, it is your food because you are the one who feel connected and the one who put thought and ideas and creatives and incentives in it. people don't understand and they won't for a long time. but you can still achieve what you want to achieve, you can still connect your food and your ideas though your food with people who taste it, and by days, people get to understand the authenticity in it.

讲的真好,让人很受启发。但我对于所谓的root有一些个人的理解。中国这么大,好吃的东西那么多,不管有怎样的heart&courage,想包罗万象大概注定要失败。毕竟豆腐脑和粽子的甜咸都能打一场内战,地域环境气候物产食材水质,这都对当地的cuisine有巨大的影响。上海街边馄饨铺的老师傅可能能做出一碗最地道的馄饨,但是他大概做不出陕西正宗的肉夹馍。 我看到有评论说 中国人都只忙着挣钱,最终会被超越,被人说做中餐都不如白人。 我不太认同。只要还有人靠做中餐赚钱,哪怕天天只想着钱不想着做饭,终究不会被超越。什么是root?个人认为所谓的根就是赖以生存的根本。脑子里天天想着挣钱,只要这钱还得靠做出来的饭去挣就有根,手艺就差不到哪去。不然饭难吃没人买,钱从哪来。但是这root也没那么神圣,也不是必要的东西。只要heart和courage足够坚定完全可以代替甚至超越root。非要头铁跟搓了几十年面鱼的老奶奶比搓面鱼那肯定搓断手也比不了。但是怀着做好中餐的心去练厨艺,肯定能轻松吊打大部分中国人。

Formosa is actually name came from Portugal. The mean is beautiful. But Portugal has never negotiated any kind of issues with China. It's about Portugal ruled Macau for more than 400 years. Macau and my hometown are only 63 kilometers away. I hope that domestic friends, especially those from Zhuhai, Zhongshan, Jiangmen, and other places. You can try to take a bus to come to my hometown with a cross-sea bridge after traveling to Macau, and there is no need to go through Shenzhen.

The philosophy of Chinese is very simple: don’t believe in god, believe in yourself and the wisdom that your ancestors left you. By wanting more and not quitting when there are lots of difficulties, this chef has gotten the true Chinese spirit! We are the nation that battled the big flood and finally won. We are the nation that moved mountains. Things are done by people, not the god. We should love people, not the god. That’s the Chinese spirit!

Michael, if you really want to connect on a deep level with the Chinese culture, learning the poetry phrases uttered between Wentao and Yijun is a must. The deepest of Chinese philosophy was passed down through literature. Once you sort that part out, it becomes 一马平川。 To be fair, your expression in Chinese language is already very good. You can express some very deep thoughts and ideas very proficiently. But the Chinese language is just way deeper and bigger due to its steep culture. However, as can be seen in this video, it is not your aspiration to become a Chinese. In fact, your final conclusion is very very American. The biggest contrast between the American and Chinese culture is innovation. Chinese are deeply influenced by culture. But Americans on the other hand, are the direct opposite. They are not so emphatic on history and thus are always more adventurous and innovative. They like to develop their own unique ways. Methods that begin with me and suits me. This results in a very innovative people. You always have a way to open up new roads or new ways of thinking because of this. So that's the interesting diversity I observe between this two cultures. Because of this difference, I can foresee you will always have to battle the internal conflict, as long as you live in China.
