আমাদের ছোটবেলায় মা রসবড়া বানাতো তুলতুলে নরম তারই ভায়রাভাই হলো দই বড়া 😄😄খুব ভালো করে ফেটাতে হয়, যতো fluffy হবে ততো নরম হবে। Stuffed দই বড়া ও দারুণ লাগে খেতে।

এই নিয়ে 3-4 বার বানালাম। প্রত্যেক বার নিয়ম মতো বানিয়ে সুন্দর দেখতে এবং নরম ও অসাধারণ খেতে হয়েছে। ইংরেজি তেও দেখেছি ও বাংলা চ্যানেল এই রেসিপি এর বর্ণনা শুনে মন ভালো হয়ে গেল। তোমাদের দুই চ্যানেল এর জন্যই আমার অনেক শুভ কামনা রইল 🩷।

আমি তো এই ড্যালার ভয়ে বানানোই বাদ দিয়েছি। এখন প্যাকেট কিনে খাওয়া ধরেছি, আমার বড়ার চেয়ে ভাল হয় আর হ্যাপাও কম। এবারে তোমাদেরটা দেখে আবার সাহস হচ্ছে। বানিয়ে দেখব। আর যত রেসিপি দেখেছি ইউটিউবে সবাই খালি বলে কোনো পানি থাকা যাবে না বড়ার বাটতে। এই পানি না দেয়ার চক্করে বড়া ভাল হতো না। আরে বাবা পানি না দিলে ফ্লাফি হবে কি করে ! তবে আমার দইএ অনেক মিষ্টি না হলে ভাল লাগে না, ইচ্ছামতন চিনি দেই আমি। আমাদের বাংলাদেশের বেশিরভাগ জায়গায় চিনির পরিমাণ বেশিই থাকে।

This is a fantastic recipe, a real gem. All the fine technical touches are there: Urad dal mix not too wet, or inside will be uncooked, not too dry or inside will be hard, and use cold water, so dal bora (dumpling) does not absorb oil during deep frying. The Japanese Tempura (Jap Pakora) is also the same - ice cold batter and very hot oil. Oil should not be too hot else outside will cook but not inside. The in between step of soaking in spiced water is genius, Water goes all the way in, making the inside spongy and wet, not dry The water is spiced up so flavors permeate into the bora, and presoaking makes them absorb the dahi. Genius! I would use much less sugar in this recipe from a health point of view. Instead of white sugar, use monkfruit extract which is not glycemic at all. Less gur (jaggery) overall, so you get a khatta-meetha taste not so sweet. All sugar is bad for you and this is the only thing that is unhealthy in this recipe, so use sparingly. I also like leaving all the spices in the final tamarind sauce. Looks nice. A very good recipe, mouthwatering!

I've been following your content for quite some time now, and I really feel like appreciating your team for the amount of research, experimentation you put in. Gorom jol na thanda jol, koto minute er jonno ki kora, consistency testing, like it's a tedious job to do, and this is what makes it a legit cooking class, otherwise "ei dhalun, ei meshan, bhaja korun, blah blah" bole video bananor kono maney nei, you cannot vouch on people's expertise. Trying everything yourself, giving exact details of everything is what makes you stand out.
