Dahi vada recipe: Dinna, my maternal grandmother, was one of the most versatile cooks I have known. She had limited means, but she would teach herself things to cook that she had only heard of, or seen from a distance, using her instincts, and experimentation. Her doi bora was one of her most prized recipes-they were soft and airy and did not have the dreaded hard lump at the centre. My mother learned it from her, and we learned it from my mother.
Do not miss the sweet tamarind chutney. It really is the dark horse here! Keep it in a jar in the fridge to drizzle on all kinds of chaat.
Besides the regular sweet and sour doi bora, we have included another one of our favourites-the salty-sour “dahi vada” that Saravana Bhavan used to serve when I worked in Chennai. If you have eaten it, you already know how fabulous it is. If you have not, please give that variation a try.

Wow! I'm a Tamilian, and I love vadas! We call them vadai in Tamil, and " Thayir Vadai" in Tamil again. It's nice to see the Bengali version of our most loved vadai! Thank you for posting this recipe Ilisha & Saptarshi!

I take pride in making the softest dahi vadas, but off late I had lost my mojo. They were just not turning out the way they used to. Today on my daughter’s birthday, I followed your recipe and they turned awesome.. thank u so much Bong eats

Instead of the brine you'd prepared I use a base of warm water tempered with asafoetida into which I drop the fried baras. Then, after 10 minutes they are gently squeezed to make room for the yoghurt which they are ready to soak in once they are dropped into their home base.

@@nargiskhanam9113 I guess it's a personal choice, what ever you like use that process , either way, its a win-win situation, you get to eat two different types of doi bora .. 😉

Soaking of the Vada in the diluted yoghurt, and serving with the chutney is totally new to me, will try it out soon. I'm from Tamilnadu so for our style thayir vadai we soak in hot water with salt and maybe a pinch of hing. And we only serve with plain salted thick yoghurt and garnish with red chilli powder, Boondi and coriander. My mother makes a variation where she adds a ground paste of coriander, mint, ginger and coconut to the thick yoghurt. That's yum too. PS. THANK YOU for featuring Saravana Bhavan style Vada, they used to make excellent dahi vadas. Nostalgic.

Wowww! This recipe is a different and wonderful twist to the way dahi wadas are made in Maharashtra and Gujarat. Adding the Garam masala and the ginger to the buttermilk is sooo different & refreshing!

My mom makes the best doi bora. She soaks the fried boras overnight in fridge and next day they taste even better, she also prepares the masala and sour curd at home. This video brings all those sweet childhood memories back🥲.. Summer holidays and mom's homemade doi bora.. Thank you for sharing such a lovely recipe with all ♥️

One of my fave dishes too. Made esp during festivities at my home. In the south indian homes the Vada has a hole inbetween and the curd has a tadka in it.

One reason for flattening the vadas slightly, or poking that hole in the centre, as south indian versions do, is to have them cook all the way through. Making them slightly smaller also helps. I go with this last

Medu vada + chat masala + Amul dahi + khatta-mitha chatni + shredded fried curry leaves + jhuri vaja; I like it better than authentic soaking-wet ones.
