Can you do the technique of using cornstarch when making beef dishes? Oh and using egg white as well! It's interesting how it tenderizes the proteins really well, and makes it taste so much better. Your dad probably knows a lot. And is that technique really traditional Chinese?

I'd love to see more fish or vegetable dishes, though I realize that esp in Cantonese cuisine the veg prep is pretty basic. Maybe Chinese BBQ at home, if it's feasible (eg siu yuk and/or char siu)

I’m Nepalese, my dad doesn’t represent all Nepalese dads but my dad cooks and prepares food just like your dad. He loves us so much and he also knows what our favourite part of the meat is and always serves meat equally for us and eats bones for himself 🥺🥲😭 Even if he grills few pieces of meat as a quick snack while making the main dish, he never eats by himself and always calls us to have for a single piece. Your dad Mr. Lau reminded me of my dad and I miss him so much and can’t wait to eat his dish when we meet again ❤️🥰🙏🏼 God bless all the caring and loving dads ❤️

I love how he teaches how to check for doneness instead of giving a specific cook time. That's something you get from experience and really helps a learning cook!

He said an approximate cooking time of 35 to 40 minutes (at 4:35 ) and that's because the cooking time is dependent on the size/weight of the chicken. He poked the thigh area where it takes the longest to cook to ensure all of the chicken is cooked. In this video, blood was coming out, so he cooked it a little longer.

I really appreciate this approach of lots of dialogue to give us an insight into a little culture and way of life instead of just a robotic way of showing how to make something. Having all the dialogue during the meal is great for those that just want to know how to make it and at the same time for those that are interested in the culture can feel like they are at the table with you. I really like the Cantonese your father speaks. Cantonese is a very lively language that changes throughout time and have many variations across the globe. You father's Cantonese retain a lot of features that is fading away in some way, and I love the way that I can find these features in your father's speech.

@czeshirecat6278 When in doubt, learn Mandarin. Almost every Chinese person will speak or understand standard Mandarin since it's the standard language of China and is more easily intelligible to the other Chinese dialects than the other way around typically (especially in the case of Cantonese). If you know your local Chinese population is more from Hong Kong or Guangdong/Guangzhou, then Cantonese would be the one. From an ease of learning perspective though, Cantonese is quite a bit harder, having iirc 6 tones (some of which are far more subtle than the ones found in Mandarin) as compared to the 4 tones of Mandarin. For reference, I speak Canto and have for all my life, but still get some words and tones screwed up, and on top of that it's way more rough to get rid of the rust when you don't use it. In comparison, despite never having really learned Mandarin, and never using Mandarin, I can understand a good 70% of normal speaking and get by in a pinch with my knowledge in Canto alone. Regardless though, the time and dedication needed to learn these languages is immense, as it is with most new languages. Luckily for you, if your goal is to be able to communicate with locals in their native tongue, the best way to learn and practice is to speak it. Find some friends and get practicing :)

There were a few really cool tips in this video. 1. Puncture a hole so the water can flow and cook more evenly. Brilliant! 2. Cooking the ginger rather than pouring hot oil into the ginger scallion bowl also made the sauce much more fragrant. 3. The chopstick trick to take out the chicken. I may or may not have said "look what Uncle Lau taught me" to my wife tonight. 🙏🏾🙏🏾

Is it because you know a different dialect of chinese like Mandarin, and he is speaking Cantonese? I find his accent quite clear and understandable if you understand cantonese language... but if you don't know any chinese... that's why there is english commentary and subtitles. The point of the channel is to share and preserve his cantonese culture, and his Dad obviously feels more comfortable communicating in cantonese

Yay! One of my favourite dishes! It's so interesting to see how Daddy Lau makes it since I grew up watching my mom make hers. There's only one difference that I noticed, my mom puts the green onion and ginger in a bowl with some chicken powder, heats up oil in a pan, and then pours the hot oil over the green onion, ginger, and chicken powder. I'm going to try Daddy Lau's way and see what the taste difference is! I make this at least once a month and it's honestly one of the easiest and most delicious dishes. The green onion and ginger sauce never lasts more than 2 days because we eat it all! It's so cute to see Cam grow up, he's changed so much from your earlier videos! It's so wonderful to see!

My family also does the method of heating the oil in a pot to sizzling and then pour it over the ingredients in a bowl (green onion, ginger, and salt). Everythig sizzles and bubbles when the oil is poured in and then quickly cools.

@@MadeWithLau I can report back that the adults prefer the heating up the oil method but the kid (5.5 years old) prefers the cooking it all in a pan method. I think the sharpness of the ginger and green onions mellow out in the pan method so that's why the kid prefers it. Either way, it's delicious!

Wow this is the recipe I have been waiting for! I went and bought a high quality 3 pound chicken and will be making this tonight! i have never put sesame oil in my sauce before and I will definitely do it since Daddy Lau says I must! Also, it was super helpful to have him show us exactly how to cut the ginger and scallions so that I will have that restaurant quality texture! I have been chopping it up in chunks that are too big! It is also helpful that he suggests corn oil because I have been using canola (which is ok), or vegetable (gross), or peanut (pretty good.) I also will need to watch the part where he breaks down the chicken many times so I can get it right. It is truly amazing to see the knife go right through the thick bones of the thighs and drumsticks! I am scared to do it! I would love a Randy Challenge video where Randy has to chop up a whole chicken by himself after watching Daddy. I absolutely love the way the pieces of chicken are so uniform and pretty, my parents can do it but I have never been able to. I look forward to trying it tonight! Thank you so much!

I loved this video so much. I live several hours drive away from my family so I rarely speak or hear Cantonese these days. Listening to your dad explain how to cook food I've eaten my entire life made me feel like I've just been welcomed home for the first time after a long absence.

I made this tonight and the chopstick trick to check if it is cooked works perfectly! I know I had been taught that before but I forgot! So happy Daddy Lau teaches us these small details so we can practice and remember! Pulling the breastbone out of the chicken also made it SO much easier! Thank you again for this great video and for explaining every single step. I really felt close to my Dad and my grandparents making this chicken, which is one of my favorite chinese dishes and everyone always made it for me because they know I love it so much. I remember my dad cutting up whole chickens in our little apartment in Van Nuys, CA growing up. We had a huge wooden cutting board that looked like it was a slice of tree trunk. My dad has been gone for nearly two decades now, but this video made me feel like he was just here. Thank you for sharing. I wish I could have done something like your videos with his dishes. He was a chef too, born in San Dong but lived mostly in Taiwan. Treasure your parents and every minute.
