I instead of freeZing the herbs (parsley), use the microwave (on half power) to dry the herbs between paper towels (turn over every minute until done, usually takes 2-3 mins until they are dry). After cool, store in an airtight container. It has far better color, flavor, and texture than frozen. Also it retains the nutritional value.

I never try it, but i doesn't see why not. Just follow the same recipe step by step using the ground fish instead. You can bake maybe instead of frying or either way. Let me know how it turned out. I mean I understand they wanted you to speak the native tongue but the Gambia’s are very capable of understanding English unless they have not gone to school which I understand if they are a person who did not have opportunities to learn English then I understand. Hi Dada i was looking at your recipes and i love what you cook and alot of your dish remind me of how we cook in the caribbean.The only thing is that I find you use way too much oil in the recipes especially in the black community we suffer with high cholesterol and high blood pressure which are the n°1 killer..we like good food but it is suppose to be healthy.a part from that good work😊😀👍🏽
