Recipe for Strawberry Bars:
Ingredients:
2 pints of strawberries (2 pounds)
2 stalks of rhubarb
liquid from 1 orange
2 TBSP coconut sugar
2 TBSP Chia seeds
Chop up 2 pints of strawberries and place into a saucepan with died rhubarb, orange juice and coconut sugar. Bring to a boil and then reducer heat and simmer for 1 hour until very thick. Remove from heat and add chia seeds. Let sit.
3.5 cups oats blended into flour
3 cups walnuts
1 cup coconut flakes
15 medium medjool dates or 2 cups of dates
pinch of salt
vanila
1 cup water
Place the walnuts, dates, and coconut into a food processor and pulse until it sticks together. add into a bowl with the oat flour, salt, vanilla and water. Stir to combine.
place half of your oat mixture into a parchment lined pan and press down firmly . Add in a layer of your jam (should be very thick by now) add the rest of your oat mixture on top. Bake at 325 for 30-35 minutes (just until the top starts to brown)
let cool for an hour

I love Isabel: Need tiles for the kitchen - make them from scratch including glazing them. Need a blanket for the bed - spin the yarn and weave the whole thing by hand. Girl, you are a magical and precious being. Don't stop being you. :)

Right? Gotta luv this young smart lady! I'm twice her age but so in awe of her. Wish I could move in with her parents and have them teach me all the cool stuff that they taught their kids. It's SO obvious they didn't coddle them/helicopter over them and let them wander and be kids! Get hurt, not suffocating them. LOVE it!

I don't know about a cookbook, but how she films those segments basically puts me into a trance. No narrating, just the sounds of the preparation. I get the same way when I watch the random hands tool refinishing video's.

she built a tiny house, made her own mugs, welded her own brackets for the shelves she made, built her own stools, build her own bench, weaved a shawl and blanket, and built a table to weave on!!!!!!!!!!!!!!!!!!!!! AND SHE'S REGENERATING A FARM!!!! incredible

@@anyariv she took wood working classes (she's mentioned it at the beginning of her tiny house build) and her family members are handy so she learned from them too i assume.

I'm 78 and I am blown away at Isabel's talent, she is so inspiring, I am honestly doing things myself that I never considered doing before and enjoying my life more than ever. I have moved to a very small town where everyone is more self-sufficient such a rewarding way to live.

Gail Marion Where is your small town? My limitation is climate, I hate cold weather and will never shovel snow LOL -- anything affordable in the south? Just wondering where all the popular small towns are!

Isabel, I just wanted to say that you're not alone in wanting a simpler life. I've wanted to be a teacher since I was 3, and heard so many people tell me I wasn't smart enough or that it didn't pay well. I never cared. I worked so, so hard and never stopped to listen to what anyone tried to tell me. I am (happily) teaching exactly where I wanted to (at my old high school), and while I don't make much money, I don't actually care. I come home to my garden and my rescued animals and my simple house each night and know that I am right where the universe wants me to be. Keep being you!

Ok like WHAT!? I am sitting here trying to explain to my husband that this beautiful 22 year old girl made a home for herself in the middle os the woods with running water and cooks her own plant based amazing meals. Oh and BTW Makes her own blanket and spins the wool herself. I am so amazed by your beautiful spirit u lift me up so much. Please don’t stop sharing ur life with us I appreciate you so much. and she made her own tiles for her backsplash with clay and kiln at her brothers... she makes her own soap and baths in the river, she gets up at dawn and does yoga masterfully... has taught.. the experiences she is gong for.. many of us have put on hold...her message is don't!

That is so true, for years i wanted to become a dog coach but always scared and excuses, now i am a dog coach because i went out of my comfortzone and just did it. Doing scary things leads to beautiful things

Wonderful watching you make the blanket. Kudos! I love wool too. I also learned to weave and made a wool blanket as my first major project and I felt so happy and satified with it. That was in 1972. It takes patience to thread the loom but experiencing patience is part of the pleasure. You live a zenful life.

22 years old - knows how to build a house, make tiles, make that yarn thingy and blankets and stuff, yoga, cooks/makes amazing vegan food. My goodness!!! At 22 I had a ‘high tec’ degree that I hated and hate it since then. Thats it. Thats my life😭😂

I am retired now but just before I did I visited an old friend . She started talking about how terrible, lazy and stupid the youth were. I about fell over! My experience with all my delightful young coworkers was the complete opposite. So many of my favorite people are decades younger than I am and I am so grateful they see me as a friend instead of a crotchety old lady!

Isa, you have LITERALLY inspired me and have awaken something in me that I thought died 11 years ago when I got my corporate America job! I've literally been doing the same thing every single day for 11 years and watching your videos has inspired me to pursue the things that I love in life, music, gardening, and raising and rescuing dogs! It's going to be a very long and slow process and I wish that I would have had something like this when I was your age but now at 40 it is ridiculously scary and uncertain! But exactly what you just said when you found that you have done the things that have scared you the most have always LED you to the right place! Please always remain as beautiful and bright as you are at this very moment! And just know that you inspire those who have all but forgotten!!!

You are an inspiration Isabel you really are such an old soul. I am 59 yrs young, what’s a number right!? When I was 20 yrs old I moved with my newly wed husband to a 68 acre thoroughbred horse breeding farm that my parents owned outside of George Wa, at the foot of the Frenchmen hills, I moved from Woodway Park north of Edmonds....... OMG what a Coulter shock for this semi city girl, but I can tell you now as I reflect through your Channel is those were the best days of my life! We did everything the old timers sustainable way of living. I learned everything about homesteading (no internet then) from a old gal 2 farms down the road. My parents lived in Woodway My husband and I ran the farm, built our own little house. Loved the hard working life. I so look forward to your videos every week! Believe me I enjoyed that 3 Hour Dr. to my parents house in Edmonds every time I needed a little taste of semicity life LOL keep on paving your special path honey! ~ Jennifer

In general it is healthy. Endorphins being released and all that. But it may also explain why deers are a little suspicious :) Normally they would be eating from a hand, but they must be thinking "this one is strange, better be carefour with it" :D

No piece of paper will reward you or acknowledge the gifts and abilities you exercise every day. You are very talented and creative; the cooking from scratch, the weaving, spinning, welding, woodworking. I don't know any one else you age who has the skills you currently have and use regularly. You are an amazing young woman and I appreciate you sharing your journey here with all of us.

I have to tell you Isabel, first off you live in such a beautiful place (how about those gorgeous flowers everywhere) but most you just amazing me. I mean really every thing you do and the food you make just is unbelievable. I am terrified to live outside my little life I have for myself. Watching everything you do makes me wish I had the courage to do just something on my own outside my comfort zone. You should be proud of yourself.

I usually never comment on videos, but I just had to give you this appreciation since you truly make my day better. Isabel you’re such an inspiration and light to this world! Thank you so much for making these videos, they really speak to me and I believe a lot of other people’s soul. I appreciate the hard work you put in and the fact that you have the courage to share about your struggles too, not just the good life. You’re so real and beautiful and even if might not intend to you do make changes in other peoples consciousness for the better. I love watching you and Hanna, you are both so brave. When I was a girl I don't remember having the option of going off on my own. We were first, to get married then maybe have a career. I'm now a great great grandma with great grands your age. My great grand daughter joined the army, though she is so beautiful I'm sure she could be a model.
