Awesome to see you skating again. I hope that Lyme's disease chills out. I got it when i was 9 or 10. Nobody was really looking for it back then and my mom just thought i was lazy. Took about 3 or 4 weeks to figure it out. I seem to be ok today. All the best dude.

It's great to see you skating again, Dan. You look like you're having fuuuuuuuun! Also, re: your diagnosis: This is just anecdotal, and kind of an n=1 situation, but a rock climber friend of mine was diagnosed with Lime's disease a few years back, and had very similar symptoms to you in terms of the chronic fatigue and sudden inability to perform physically. Stubborn as they are, after an initial GP-recommended rest phase and some unsuccessful treatments, they ignored the recommendation of rest from their doctor, leant hard into training through the fog and fatigue for a few months, and built a very solid athletic endurance foundation, and while they say they don't climb as hard as they used to, they don't feel anywhere near as limited by the disease as they did when they were first diagnosed. Might not be the same for you, nor appeal even, but might be something to talk to your health carers about, and perhaps a source for optimism. Keep crushin', bud.
