Just got my tall nikiri today. Fit and finish is about what I expected, some pits here and there but definitely not a “project” knife like some of the early reviews of these knives had suggested. There’s one small low spot on the grind which I think will even out after a handful of sharpenings. Surprisingly sharp OOTB, but a few strokes on a 1000 then 6000 it’s really sharp now. We’ll see how long it retains that edge. Going to prep some potatoes tonight and see what else I can find to cut up! Thanks for the video.

I’ll keep you updated if I remember. I’m thinking that the blacksmiths have gotten better since they first started shipping these or maybe some are better than others. Either way for the price I have no complaints.

Did you ever hear from Dao Vua about the type of pipeline this comes from? I have a tall nikiri coming soon and was curious. I would also assume any harmful substances would be long gone from the forging. How are you liking it? Using it as much or more than the nexus?

Yes actually, here is their direct quote: "The pipeine is from oil industry butit just be rusted outside, we cleaned it by using hammer, the dirty is on surface can't be joined on structure of steel" Basically confirming your hypothesis. None of the harmful substances can be bonded to the steel and would have burned off during forging. I posed the question on a few forums and that was the consensus there as well. I actually rarely use the Nexus anymore, been spoiled by the extra knuckle clearance on this one. It easily takes a wicked edge and retains it for a surprisingly long time considering how easy it is to sharpen.

looks like you should be using much more of the stone rather then being so choppy

Watching the video again now I can see how it looks like very short choppy strokes where the video is accelerated. In real life, the strokes are much longer than they look in the vid.

I love your channel but I'm never buying a knife made from recycled steel. The cost of the steel is such a small part of making a knife that the idea of buying one made from junk is just counter-intuitive to me.

Appreciate the feedback! I hear ya, to each their own. In this case I liked the idea of using what would have been junk, left to rust and rot, and transforming it into something functional. I also liked that I was supporting the craftsman directly.

Pipeline Steel 🤔 I’m assuming chemical pipes. Would that even be food safe? I work in the chemical industry and definitely wouldn’t make food prep tools from pipeline. I mean is it food grade pipeline chemicals like PGUSP, then maybe. Thats the only thing keeping me from buying this knife. Love the shape and price . Do they sell this knife with new steel?

Hmmm. That’s a good point. I’d always assumed that the forging process would burn off any chemical residue but never really looked into it. The maker is pretty responsive on Instagram, I’ll see if I can get an answer on what the pipeline was used for. They don’t sell it with new steel but they sell the same shape made from leaf springs.
