I am Canadian and my grandmother used to make a cake similar to this for my birthday. Only difference was she "iced" it with whipped cream. Best cake ever!

I too love a slice of Victoria sponge cake with a cuppa, Darren 😋...I add a layer of butter cream under the strawberry jam. I know it isn't authentic to the original recipe, but - as you know - it's common practice over here - and it's delicious. I love your videos and thank you for sharing your recipes and anecdotes. 😊

You can buy superfine sugar at any grocery store. Domino (among others) makes it. I use nothing but superfine when I make meringues.

I wonder if the Royal chefs bring favorite meals or other foodie treats to the RF when, as with HRH Prince Philip recently, a royal stays in hospital, just to cheer the patient up?? Darren, you're absolutely lovely and I always thoroughly enjoy your videos and memories. I love British cuisine and dishes like yorkshire pudding, sunday roast, scones, shepherd's pie, haggis (yes I actually LOVE it!), golden syrup sponge pudding, bubble and squeak, pasties, pork pies, builder's tea etc., but to be honest, I've never enjoyed the classic victoria sandwich with just jam in the middle and castor sugar on top. Respectfully, I feel it needs some cream so I always sandwich it generously with a layer each of jam and whipped double cream and it is divine! Thank you for sharing your recipes and memories. They are a wonderful way to feel connected to Diana ❤️

I learned something new from this video , and that is why caster sugar is caster sugar and it's because of the casters it was put in . Love a good sponge. Might have to look into an air fryer, I didn’t know you can cook cakes in them. Just one thing when you say the temperature that you are cooking something at, could use please say whether it’s C or F. I thought the English are Celsius the same as us in Australia but I may be wrong. Keep up the good work. 😍👍
