After exploring the city of Tehran for a few days, my epic road trip through Iran began in the city of Qom! Come with me as I learn how they make a traditional Iranian sweet called sohan!
Sohan is a traditional sweet that originated in Qom during the Qajar Dynasty. It’s essentially a crunchy brittle or toffee made from wheat, butter, eggs, sugar, rose, saffron, cardamom, and nuts. My buddy Mr. Taster took me to a factory where they make it!

You can smell the cardamom as soon as you walk in! I loved the aroma of the rose. As I watched, they mixed the paste and added almonds and butter as they stirred it. It’s not a healthy sweet, so eat it in moderation! They even make a sugarless version for diabetics!
Once they put the mixture on a pan, they mixed in some cardamom and rolled it into balls. After that, they flatten the balls out and bake them.
Then, they let them become thick cookies, smash them, and then smash pistachios and almonds into them. It’s such a fun and intricate process. I even got to try to smash one myself.
Next, I added a bunch of pistachios and almonds and molded it into a perfect circle. It was so much fun! Then, the excess cookie pieces that break off during the smashing process go back into the batter

این قبلا ضبط شده و آلان بعد از ادیت داره آپلود میشه. سه تا چیز حالمو از این خیکی بهم میزنه. اول اینکه خیلی جلفه. دوم اینکه همه رو اول میبره رو کله پاچه! سوم اینکه سمت شمال ایران که بهشت ایرانه نمیبره توریست ها رو. اصلا نمیدونم چرا همه باید با این مشنگ ایرانو بگردن!

I love this stuff. Discovered it before I travelled Iran ten years ago. Will be going back this year to retrace my last trip, and will be stocking up on this and gaz from Isfahan. It’s more like a toffee brittle or caramel, def not a cookie.

Hi David do they say "ghee" in Iran or is the clarified butter called something else? When you say ghee I definitely know that it's clarified butter they are using.
