A bit of explanation for the cheese. The processes cheese has a lot of sodium citrate, an emulsifier. This is what those movie cheese dips and Velveeta have that make the cheese sauce smooth. In fact, it has to much, enough that it can emulsify other cheeses without it. You can use half processed cheese, half good cheese to make a sauce.

I think the candle might work better with the butter clarified first (or just using ghee), removing the water and solids should help it I think... Though the garlic would still be dropping to the bottom. Maybe just infusing it with garlic and then removing it before putting it in the fridge would work? Now I'm curious. sugar work is a time sensitive thing, so it's best to just do one flavor or color at a time, so everything else doesn't have time to set. To try and delay the cooling, you can put the containers holding the molten sugar on a tea towel. You can also just sprinkle the nerds on as well

I think you were right on the money about the overnight proof affecting the texture of your bread dough- either the yeast for overactive and broke down the flour too much, or the flour was over hydrated so you ended up with a loose dough. If you choose to make more bread in the future, I highly recommend weighing your ingredients so that you get more precise ratio of flour to water. Good luck!

So your super-wet bread dough looks very similar to my overnight pizza dough. It’s always super-wet and sticky, but part of my pizza dough recipe is to add a little more flour after taking it out the fridge. Enough that it’s still pretty sticky and soft, but it’s just about handleable to shape with damp hands.

Before I got a bread dough whisk, I found that the best tool in my kitchen for mixing the impossibly thick combination of flour and water was a pair of chopsticks. They get right down to every part of the bowl, they don’t accumulate dough, and cleanup is a snap. For the butter candle, I would maybe suggest clarifying the butter or making ghee, or using beef tallow.
