I agree especially now that I do recipe reviews as well. Alot of people don’t realize how much money/time goes into these recipes/editing. I still have yet to drop 200 on a parm block though. 😂. When you make proper alfredo (no cream!), you need to add the cheese slowly as you toss it, not all at once! That's why your cheese is clumping together. Nice video though :)

The only authentically Italian one was NACS. Butter and Pecorino-Romano cheeses are low in lactose; they shouldn't cause an issue for people with lactose intolerance. It's like a more adult version of Kraft's Blue Box.

I love seeing all the different ways people make things. It's a great way to get ideas on how you want to make it which you did in the end and you seemed very pleased with the outcome. I rarely cook things "exactly" how a recipe states because I either do not have all the ingredients or I don't like an ingredient that is in the recipe so I will improvise. I am rarely disappointed with the changes.

Put the cheese in a bowl and add the pasta water to that and make a thick cream. Then toss that with the pasta. No lumps. I’d add cracked peppercorns too. Ps. You missed out the most important Italian food creator Vincenzo’s plate.

awesome! The reason why you're getting globs of cheese on NACS's recipe is because you're using a grater that doesn't shred the cheese into a fine enough texture. You have to get the cheese thinner and finer to allow it to dissovle properly.

I had the same problem when making this recipe. The answer is either you aren’t using enough butter, or perhaps your heat is too high when mixing it together, or lastly you’re not agitating the ingredients enough to force the emulsification of the butter water and cheese. When you have the correct amount of each ingredient it comes together in a beautiful rich and creamy sauce, that tastes like there’s far more ingredients. It’s tricky and took me quite a few tries to really master.

10:01 - Exactly. Cream sauce or white sauce made from a rue only works with pepper, salt, and nutmeg as spices (nutmeg is amazing in this btw). However, you could add cheeses to the white sauce in order to emulsify the cheese fats and and make a cheese sauce. It doesn't work as well with low moisture cheeses like parmesan cheese, though.

I came from the fans of Chef John. You definitely make a good work to give us perspective of all techniques you evaluated. I know it was a lot of work, but keep it up. I think that I didn't like to add the chicken stock to the sauce and no convinced of the boiled chicken. I definitely appreciate the addition of the egg yolk to increase the creaminess of the sauce.

Love watching you test these; I go by your taste buds and make the ones you suggest. That aside I used to be lactose intolerant but I did a system reboot and have been free of it for over 3 years. All I did was fast for 7 days. Now I just fast every so often for a couple of days to keep it in check.
