I don't like ricotta either. I use 3 other cheeses and no cottage cheese either. You don't need to spend extra money on the no bake noodles either. Use regular noodles and don't boil them. Layer everything like usual and the sauce will make the noodles soft. It takes 45mins to an hour and the noodles will be done. I've been making it for years. Trust me it will be good. 😊

Good quality ricotta is superb. Common brands like Galbani are blah at best. Cheap ricotta in the USA is just not good. But you can find amazing ricotta being produced here. You are going to have to search for it and it will cost more.

This may sound odd but I find adding a little nutmeg, garlic, and basil to my ricotta takes it to the next level…for stuffed shells you add the seasonings and an egg. But I love ricotta, and will splurge on a good brand.

She's right. Ricotta does not belong in an authentic traditional lasagna. Italians use a bechamel sauce, which is more labor intensive. I think they use ricotta cheese primarily for desserts.

That depends on where you are in italia. There are many types. This is the lasagna from Bologna the version America is used to comes from Napoli. My favorite in the fall is gorganzola and pumpkin with bescimella and Parmigiano reggiano ❤❤❤❤❤😊

Just want to mention as this is tagged as a vegetarian challenge, if you use real parmigiano reggiano (parmesan) than it's not vegetarian as that's made with enzymes from baby cow stomach (that have to die before you get the enzymes out of the stomach). Same goes for other cheeses like grana padano and gorgonzola. Now, those cheeses can be made with microbial enzymes, but if they're traditionally made cheeses than baby cows had to die for them, thus they're not vegetarian.

Supreme Ricotta is not gritty it's the only Ricotta that I will use. Then you add an egg, parsley, grated cheese and mix together before layering in the lasagna. Delicious 😋
