I don't like ricotta either. I use 3 other cheeses and no cottage cheese either. You don't need to spend extra money on the no bake noodles either. Use regular noodles and don't boil them. Layer everything like usual and the sauce will make the noodles soft. It takes 45mins to an hour and the noodles will be done. I've been making it for years. Trust me it will be good. 😊

Lasagna comes from Bologna, it doesn't mean that because it comes from a country all the recipes used there are the right ones. You will never find real cannoli in Modena or some real pizza in Milan

Thank you I’m like somebody had to release the thinking was a little dense lol. I’m like how do you season the sauce but can’t season ricotta and see if you would like it. I could understand not liking that type of cheese or the texture but to say it’s bland as if seasonings don’t exist... Now I’m wondering did she ever season her lasagna or was she always eating bland lasagna. 😂😂

Béchamel😊 is only butter, flour, and milk with nutmeg sprinkled. When you ad cheese, it becomes a MORNAY sauce.

Ricotta is a little bit more allergy friendly than the bechamel sauce. Sometimes people used drained cottage cheese for the same reason. Less whey.

Good quality ricotta is superb. Common brands like Galbani are blah at best. Cheap ricotta in the USA is just not good. But you can find amazing ricotta being produced here. You are going to have to search for it and it will cost more.

You really should add some water if youre not precooking your noodles. Its gonna suck every bit of moisture out of that sauce and cheese and it will be way too dry

This may sound odd but I find adding a little nutmeg, garlic, and basil to my ricotta takes it to the next level…for stuffed shells you add the seasonings and an egg. But I love ricotta, and will splurge on a good brand.

Update I made it tonight my family loved it they said it was like a Mac and cheese lasagna mash up personally I like the ricotta better, but it's actually delicious. I look forward to trying or adjusting your recipes in the future. This was a lot of fun. Thanks for sharing

She's right. Ricotta does not belong in an authentic traditional lasagna. Italians use a bechamel sauce, which is more labor intensive. I think they use ricotta cheese primarily for desserts.

That depends on where you are in italia. There are many types. This is the lasagna from Bologna the version America is used to comes from Napoli. My favorite in the fall is gorganzola and pumpkin with bescimella and Parmigiano reggiano ❤❤❤❤❤😊

I used to buy vegetable lasangne ready meal. It was a good gluten free brand called Amy's which sadly seems to have discontinued as I can't find it anymore but yours seems to have a lot of the same ingredients so I'd like to try this and see if it works as a home made version

Just want to mention as this is tagged as a vegetarian challenge, if you use real parmigiano reggiano (parmesan) than it's not vegetarian as that's made with enzymes from baby cow stomach (that have to die before you get the enzymes out of the stomach). Same goes for other cheeses like grana padano and gorgonzola. Now, those cheeses can be made with microbial enzymes, but if they're traditionally made cheeses than baby cows had to die for them, thus they're not vegetarian.

Ricotta should be seasoned at least that’s what we do we season it with garlic powder black pepper Parmesan and Romano and oregano and parsley and then we add that to the lasagna

We used no boil lasagna noodles for this one! If you don’t get that variety, then you should definitely cook them first

Supreme Ricotta is not gritty it's the only Ricotta that I will use. Then you add an egg, parsley, grated cheese and mix together before layering in the lasagna. Delicious 😋

Who puts Ricotta in a lasagne? I have never seen that. A lasagne ALWAYS comes with a Béchamel. It's one of the most important ingredients. But I'm from Europe and maybe Ricotta is an American thing. Don't think it's common in Europe.
