It’s called caraille (ca-rye-lee) in the Caribbean (specifically Trinidad) and we usually just fry it with oil, salt, some green seasoning, onion, garlic and scotch Bennett pepper and then either eat it with roti or bread….but yes your dish looks amazing 😊🤤

Ah bitter melons! As in bitter gourd, or karela in Hindi. It's one of my favourite veggies. We tend to stir fry it with spices or stuff some good stuffing in it and then cook it in some broth. It's absolutely delicious and we eat it with roti or plain white rice. A delight!

I also made the mistake of putting vegetables in the freezer. My Mom told me to NEVER do that to fresh fruits and vegetables as once you take it out, it softens before your eyes. 🤣

Well we call it corola here in Bangladesh.. I specificly Don't like but i love it when my mom make it.. I saw her secret recipe how she made n it never taste bitter well she say less tause in the pan is the key to less bitterness n i eat it with rice n dal man combo is Amazing You need garlic, shallot salt n bitter melon Toss everything in the pan but garlic n shallot will be undee the melon n oil like that much so it look oily but not too oily like 10-15 spoonfull, thn low heat about 10 min thn toss n anothers 10 min.. Thn see it shouldn’t be to fryjng but frying if need fry another 5 min thn u r done u csn drain the oil after... remeber 2 or 3 lil toss or dont mix or anything leave it while cooking You'll love it

Lisa u can try scraping inside with smaller spoon, cut it in half and make enought room for the spoon then spin the spoon inside and that will do it. Also I'm from Gujarat,India and here we fry those slices till it looks like chips add seasoning u like and that tastes amazing

the salt was definitely a good idea to draw out some of the extra water, but maybe you could've rinsed the melon slices after the salt? it probably would've removed some of the salt without really adding water back
