I LOVE that you're becoming a fellow sourdough queen!! I usually make my leaven at night and then do my stretch & fold throughout the day the next day, baking it in the evening. I've found that letting the leaven sit overnight really helps me get a good rise, especially if you have a colder kitchen(;

Heard something recently on a podcast called “sincerely, Me” she talks about if your struggling to go from a negative thought pattern to positive thought pattern try shaping your mind to a more “neutrality “ version so a negative would look like “I’m gonna be really bad at this. I am no good at anything. A positive would be : I’m gonna do great at everything I do. The neutral side would be : “ I’m gonna let myself be new at this” so it’s neither negative nor positive and to me it feels less forced and easier to get into a better frame of mind. Idk if that helps but I thought she had a really neat way of looking at it. 🥰

Michelle ❤️ if you take the rubber seal off your sourdough starter jar and loosely place the lid on top, it will allow the gases (created by the fermentation process) to escape.

I used to really love watching Michelle’s videos but it seems like in every video she is complaining and is down… she is so fortunate and blessed and I know everyone can have seasons of sadness but man it becomes hard to listen to when someone with so much complains so much.

Just a tip for the starter do a lose lid, do not clip the top on. (You can take the orange part off and just set the glass lid on, this creates the perfect cover that allows air to escape) This isn’t allowing the starter to realize carbon dioxide to rise properly and your jar could also explode due to the pressure buildup.

I love love loved this!!!! The raw chats are my favorite honestly. I am reading a book called Find Your People by Jennie Allen and it’s been talking about vulnerability and how uncomfortable that can be for us. We have social media able to connect with a lot of people yet we are the most lonely generation is something that she says. Who are you to complain about these things? You are chosen by God, he knows our human nature, and it's OK to feel those things. I've been working on allowing myself to feel whatever I'm feeling and working through them, rather than pushing it down and away and then exploding later. He cares for our mental health too!
