I agree. We harvest and use absoluely every bit of meat we can. Neck roast is the best for stew. I have the hides tanned and will use for chairs, gloves, etc. Hudson's on the Bend in Austin venison stew is my favorite recipe. If that yard pimp ever gets out of hand cook us a chicken stew! Our old rooster jumped up and spurred my mom when we were little. No sir, he caught a 22 short to the head and was our dinner that night! Love it SK

Neck roast is the best part of the deer. Stuff with andouille sausage and Holi trinity, wrap with bacon and slow smoke till you see the sausage fall apart. I like it on baked potatoes. You're a great chef and amazing person for your public service. Thank you sir
