The way Dexter closes the distance at 0:30 is similar to how he disarmed Doakes on the pier. If Deb had looked away for a split second whilst reflexively stepping backwards I alway thought Dexter may have been setting up the option to grab her weapon instead of talking his way out.

I don't think so. For one he cares for Deb, meanwhile he doesn't like Doakes very much (surprisingly). Also when Doaks caught him, Dexter was just "Welp, you caught me", meanwhile in this scene he immediately goes on defense and tries to give any excuse that he can come up with.
