Great tutorial. As a former professional butcher I would like to clarify something that isnt very intuitive. What he is refering to as the top and bottom rounds are actually reversed, so what he called the top is actually the bottom and vice versa. This is because when butchering in a facility the legs are generally removed whole and laid on the cutting table opposite to how he is handling this deer in the field. It lays with more stability on outside of the leg as it is flatter than the inside of the leg. The top, or inside round, makes better steaks, the bottom round is best used for roasting, corning, stew cut or ground.

finally, this comment clears that part up for me. Every other tutorial had the bottom round reversed to top to this tutorial. Otherwise great video. Would probably be hard doing it on the field when you need to keep the bits for proof of sex, might get you in trouble if you don't bring along some pieces of the animal.

I’m going to be 56 next month. And dragging a deer is getting harder and harder as the years go by! Especially when you hunt 2 miles in the deep woods like I do. So I’ve been looking for a good KZbin tutorial on boning a deer in the field, so I can pack out the meat instead of dragging. I love deer hunting….But I’ll be dammed if I’m gonna give myself a heart attack doing it! This is by far, the BEST video I found on the topic!! Thank you so much for sharing!! I'm getting up in age myself. My father taught me to do this but he stated with leg cuts and up the belly. Skin half the hide back, bone it out leaving your cuts laying on the clean hide. Then Skin the bottom side as you roll the carcass over onto the first cuts. Bone out the second side, roll the carcass off all the cuts. Tie opposing front and rear legs of the hide together and you have a handy deer hide sack to pack the meat out with. If you let the meat and skin lay exposed while you find some water to wash up with. When the meat and hide dry a little the meat won't slide around in the hide. The old guys didn't have 4 wheelers to make life so easy.

@@cliftoncornelison8820 Depends what kind of terrain you’re using them on. They are fine if the ground is relatively flat and has no obstructions. But Where I hunt, there’s a lot of hills, briar patches, bolders, logs, etc. etc. In those kind of places, using the cart is harder than actually dragging them. Trust me…I know this from experience.

@@dansimmons5796 Watch the end when he removes the deer’s head; the tag is clearly in plain sight, that was the main purpose of bagging and taking the head. Great video.

Great video! I picked up some tricks for the future on public land but he is confusing the bottom round with the top round. Eye of round connects to bottom round and contains the rear quarter gland. Top round is where legs rub together and makes the best steaks!

Very good video. I realize deboning for backpacking out is the objective. However, I have found that the ribs, properly cooked/grilled, are really delicious. Especially if pressure cooked first.

thanks for the awesome tutorial, I've boneing and packing out moose and deer for 40 years here in Alaska and learned a lot from this video. I use a small tarp or visquine to help me keep the meat clean.

Great idea Rickey! Getting into bowhunting later in life and don't know anyone to learn from. KZbin and the comments always hold gems of information. I have camped my whole life and bring a sheet of tyvek to go under my tent. It's super light and super tough. Will have to bring some on the backcountry hunts too!

I used the Seal Bag backpacks that they use for whitewater rafting gear. Completely waterproof and easy to clean. Fill the bag and walk out.

Great video. At 70 year old I'm not able to drag a deer out of the woods. In nmy younger days I would field dress it and tote it out. Thanks a million for the video I learned a lot. Now I can do it the right way without hacking the meet up.

Thank you for the video, as usual I learned a few things I will change and I love the knife, I use scalpels for a multitude of things and have never really liked the surgical handles for them. I definitely will be getting a couple of those to add to my collection.

If you use a roofing (shingle)hook blade to make the cuts through the skin,it does a nice clean job and doesn’t go to deep!The blades fit in a small folding utility knife .Easy to carry.

Great video. I didn't realize it was legal to debone and pack out meat in PA. I definitely am considering this for next deer since we don't get as much snow as we used to and the 1/2 mile drag has gotten a lot harder.

I do all mine this way no matter how far from the truck I am. It saves several steps and is so much easier. Once you get to the truck you’re meat is ready to start processing.

I am so thankful that the vast majority of FL so far hasn’t been testing positive for CWD. I think we have one area up in the northwestern FL that has had a couple of deep test positive, I no longer hunt sadly, but a friend of mine does and they have to have all deer tested for it. So far it isn’t spreading but it’s probably only a matter of time before it does. Now I understand why you leave stuff I am used to keeping and using for broth. I will have to do some research on this before I use any bones from venison again 😢😢😢

Some states require you to keep proof of sex and the tag follows the meat. Proof can be genitalia or the head and the hide can also stay in the field except for bear but I would double check that for bears.

Nature will take care of the rest. If you are really worried about cwd in the area burying the carcass might not be the worst idea though. Deer have been documented chewing bones.

Thanks for this video. As a former Pennsylvanian who has harvested both buck and doe I never boned out a deer, just gutted them and dragged them out on a plastic roll-up sled.. BUT... now that I'm in Nevada hunting antelope, mule deer and elk from a two wheel drive e-mountain bike I absolutely have to bone out my meat to load them into panniers and front and rear racks. "One man's burger or sausage meat is another man's jerky."

Grind the shoulder? OH MAN have you never slow roasted that meat just like a beef roast or made a stew with it. The back strap made be what most folks think is great but so is the shoulder meat and a lot of other parts. Low and slow roasted with bone broth made from those bones are absolutely phenomenal.

I've done this before. It's great if you're looking at hard drag over rugged terrain. You will very likely have more hair to deal with. Well at least I do.

He is using a Havalon knife as you probably know. It uses a replaceable scalpel blade which is very reasonable to buy, and comes in many sizes and shapes. In my experience using this tool, one blade does one Deer, most of the time, sometimes more. If you hack at the bone or pry too much (it can snap sideways) and in a more careless manner, you can roll the edge of the blade as it is very fine, although still very hard steel. I touch mine up a bit sometimes with a sharpening rod, but I am a bit overdone about it. Mine is the same model as he is using and many years old. They make one now that has a traditional folder blade on one side and the scalpel on the other, which I don't have. This man was a pleasure to watch. I am hunting in a steep area this year and was just worrying about the take out this very morning. How is that for putting the Deer before the cart? :)

Excellent work Sir, great video and tutorial. Yes didn't even think of that disease,and leaving ticks and fleas things. Yes Sir. Good job again. Some of people down around my way central WV don't care for game officials. But if they didn't break the law's they wouldn't have to worry. I'm sure if person was starving I mean hungry for it.this day an age it can be hard to get it bills paid and groceries feed the family gas get work o n min wage job. If person honest I figured any human being work with one depending on the situation. Not always about writing a ticket learning and helping. You Sir look to be doing ur part.just little something to keep on mind if you run up on someone with no license ,or maybe a person that's not "allowed" to hunt with certain things, May be we all can learn be better human beings help not hurt. I'll echo some of the other replies and say that I've hunted PA for 4 decades and never even realized quartering/deboning in the field like this was legal in PA. I'd have done it this way all along had I known. Oh well. Better late than never, I guess. Thanks for the video.

This must have been an exceptional year to have taken a deer in rifle season in PA at above 30 degrees F. I don't remember 2018 being that temperate. That might have been a muzzle loader, but I can't tell from the distance. Great instruction however. Thank you.

I’ve tried that method. Really hurts my back. Actually easier to drag for me. What I plan to do is set up a way to hand the deer in the woods and take care of it that way and won’t have to drag either.

No disrespect at all, but wow those deer are small. I hunt Northern Minnesota along the boarder, I can honestly say, a mature doe here would be twice the size...and some bucks before field dressed are 280-300lbs. Great video btw

I don't know if this is legal in all states I'm not sure about Indiana where I live I'm pretty sure though now that we got a check in online when you can check your deer in online if you're somewhere with cell phone service you can check your deer in right after you kill it and after your deer is checked in you can do whatever you want with it I was wondering can you do this on public land and leave the bone and everything behind

Yes I hunt IN public ground. It is legal to do this, but you may not discard the waste in a water source. This would be considered wanton waste.
