Letting ur cake set for a while..does this help with air under the frosting..humidity is so high here in southwest Louisiana..cake will sweat etc

I'm not sure what you're asking... I let them settle before I frost them because as the cake settles, it pushes the filling out of the sides a little. I like to let that process happen before I frost the cake. Or are you asking why I let it set up in the fridge before I put the final coat of icing on? I do that because it's easier (for me) to frost a cake that has a cold crumb coat so it's sturdier and holds its shape. If you're in an area with high humidity, unfortunately, cakes that are refrigerated will sweat a little. When it's hot and humid here in the Summer, I keep the air conditioning in my house on BLAST. It's cold in here, I have to wear a sweatshirt! And same goes for my car for deliveries. I keep it freezing!

So you started out with a quarter sheet and then cut that in half correct? Do you know the dimensions of the pan used? Or the dimensions of the finished product? I have a customer wanting one of these.

Exactly! I used this Wilton quarter sheet pan, it's 9"W x 13"L x 2"H. amzn.to/3IbzUFZ The final dimensions with the icing and fondant are approx. 10"L x 7"W x 4"H.

I'm so used to working with Marshmallow fondant that I prefer to use that over anything else. I've used modeling chocolate a few times. I do like it, but it's more expensive to make, it melts if your hands are too hot, and it may not hold up as well in warmer temperatures. But you can definitely use that if you prefer!

I've been doing this for over 20 years. When I first started out, I was basically giving my cakes away! It takes some time, but as my skill improved, my prices increased. 🙏
