Your Currys are quality mate. made them a few times now and I always have that base gravy ready prepared. You should write a book with all these recipes too, I would buy it 👍

Wanted to share something with the other commenters: Get asofeteda powder from your Indian grocery and use about a teaspoon prior to boiling. It stinks when raw, but through witchery it elevates any curry to a new level. While at the Indian grocer, also get a bag of fenugreek leaves. Also, if you're feeling lazy, look for Monica's curry pastes. Better than most restaurant curry pastes.

If you live near Bexleyheath there is a fantastic Asian store opposite the Furze Wren Wetherspoon. It's called Alli Bhavan. I used to go to Brick Lane for my supplies, but they have a far superior range and it's only a ten minute bus ride for me.

My chicken tikka has been marinading since last night, just cooked and stained my basmati and a kilo of mixed powder has been done, along with 8 litres of base gravy. Cannot wait to do this Madras tomorrow 😃👌

This is now my official favorite curry. Watch that naga paste, a tad too much and your nose empties everywhere, your voice goes sneaky as your nads seek refuge, you get a deep belly burn, and you then only have to wait a couple of hours before your rear end exit gear gets quarterized!! Love the apron Al, would love to buy one. Well done fella.

Thanks to you I made my first curry from scratch (chicken methi) today. The base gravy was a little thicker than yours, but I was making a larger amount and it worked beautifully, thick sauce and deep flavours. I'll be trying many more of your excellent and easy to follow recipes. What would your recipe for a vegetable samosa filling be? I've seen it using raw potato and carrot, but also par-cooked. I've a vegetarian friend who'd I'd like to wean off the appalling soft doughy shop-bought simosas he eats.

I think Al recommends you loosen your base gravy up with more water to get the best consistency. If you are interested I have an incredible recipe for a Vegetarian curry which even avid meat eaters love . I know it is great because I served it at various Fire Stations for years without getting lynched!!

Unfortunately The Management doesn't want spice in her life although she has forced down the occasional biryani when she had to be polite with friends. Oh the misery. @@leetolley966 yes you can. I make a massive amount, then divide it into plastic containers and store it in the freezer. Just take it out it the night before you want to use it.

Hi Al. Funny enough I made your last madras tonight, I used 2 tbsp of extra hot chilli powder kind of ruined it as it tasted more like a vindaloo! Lesson learned on the chilli powder. I'll have a go on this one tomorrow. Great apron by the way, hope you have some made!

Ghee is too strong. Personally not a big fan. Maybe use a tiny amount at the end of the curry
