@ it was good tried it last night,I think next time I might sear my backstrap first then wrap them in the biscuits,like he said in video you can’t fry them to hot because the biscuits get crisp and done in literally a minute…I like my backstrap rare but the grease never even got to them they were completely raw..I finished them off in oven for about 7 minutes and they were great

Famous chef told me years ago. Backstrap, sliced thick. Salt, Pepper and garlic. Cast iron pan as hot as you can get it. Butter (clarified if possible) and high temp oil, 2 minutes per side. looking for 125*-130* max. Take em out. Pad of good butter on top. Wait 5-10 minutes. Pour a glass of nice red wine and enjoy. Venison you harvested yourself is a gift from Mother Nature, don't overcook it!! Been doin it that way for 20 years. Love the show SK Love from Texas

I just cooked some bacon wrapped strap on the pit last week and yeah the bacon don’t get crispy but I like it the family don’t so I’m gonna have to deep fry it next time . All 4 ways look good .
