This has got to be the best video yet. Having you show someone the steps and go through the process side-by-side was really helpful. Can you do the same for sheep, pork, and beef? Just had a terrific lunch at my parents...broccoli-soup, lamb-shoulders in curry, baked potatoes and coliflowers with bechamel-sauce. Now My dad just poured us a nice Highland Park, while we wait for the Vuelta-race to start on the tele. But in the mean time I can enjoy this three-quarter-of an hour video. The kind of sunday-afternoons that make me a very happy camper....and very gratefull for the good folks in my life. Just wanted to share that.

I haven't hunted in a while, but someone in our group would always bring blackstrap for breakfast. Fried potatoes and onions, scrambled eggs and medallions of whitetail blackstrap. We were living like kings! Good job, young man!

He definitely knows how to use the pointy end. Those were better cuts than a lot of experienced butchers I have seen. And he goes rather fast once he knows where to go with it, didn't expect an apprentice to be quite so quick and accurate. Normally only see one or the other.

Scott, as always, magnificent job, and great " young apprentice " you have there in Shane. I commented to you before, I have gotten away from the different cuts with my white tail over here across the pond, and do lots of grind for tacos, nachos, chili and meat sauce. One thing i do make with the rump, maybe the bottom or top is clean and get all silver skin off, use tenderquick from Mortons, and cure for one week, hang over night, tie, smoke to 145 F, finish to 165 F in the oven. Hang for a week and then slice very thin, and use for dried cream chipped venison over toast, or as its known SOS... SH#T ON A SHINGLE. The wife likes this much more than store bought. Again great video Scott, and Shane. CHEERS!!

Watching Shane who is an apprentice (who is probably faster than most of us) compared to Scott shows just how fast and skilled Scott is. It's hard to compare when just watching Scott alone but now you see his true mastery.
