Great video as always Scott! Have to thank you anyway for your butchery videos. I got my hunting license in June and have since shot three buck which I was able to butcher thanks mostly due to your videos. It's amazing what you can learn on the internet thanks to kind people like you who are willing to share what used to be closely guarded trade knowledge. Hope you didn't forget about the tenderloins tho :-)

How do you treat your cutting surfaces? I see you butcher all kinds of things on various boards or tables. Blood, guts, fish. Do you just wash it off with water or detergends? Any desinfection? Btw, absolutely love your channel! Lots of wonderful food and many things to learn. Greetings from Germany, Sebastian

horle Hey sebastian. All of the above really,hot soapy water,then a food safe disinfectant,the key is really hot water for your detergents to cut through the grease then the disinfectant to kill any bacteria.

+Jestin Fabian It's a filleting knife. Most filleting knives are designed to be able to bend a little. It's not for hitting the bone directly. Just to carve away the meat from the bone, or for cutting through joints

Thanks for another excellent deer butchering video. Your previous deer video is how I originally found your channel. As you can imagine, all of your hunter viewers like me are probably wondering where you get these deer. Do you (or a friend/customer) hunt them or are they farmed? Is this at your shop rather than your kitchen? It seems a little early in the year for hunting deer but I don't know how it works over there. Here the very earliest season starts ~15th September. I really hope you can come to the USA one day so that I or one of your other loyal fans can provide a 150 lb whitetail for you to dig into!

joshjaydah properly prepared as posted, you would prefer venison to beef every time. for this I promise you! absolutely no smell, the "silver", (the thin membrane that envelopes the muscle) is what gives the meat any "gamey" flavor, which must be removed. cooking time is reduced to half, because of low to no fat content, with twice the nutrients. there is no comparison to beef as far as flavor, unless you prefer fat. venison is truly the most delicious meat you will ever try, prepared properly. also, a side note. if the animal lives in an area with primarily hardwoods, such as oaks,(acorns)the flesh will taste different than if it's habitat is closer to, say civilization. (cornfields). for me there is no preference, as both are equally delicious. give yourself a treat, and enjoy one of natures true gifts. Peace!

Could you do a cooking video showing how to cook a whole venison roast (or Joint?) I've only tied it a couple of times and I was not very happy with the results. Dry and tough. If you can cook shanks and make them tender, I'm sure you have a method for the whole haunch.. Thanks!

I've seen some people take tenderloin looking pieces from inside the ribcage of the deer. I can see them in your video but you didn't take them out. is there a reason for that? I'm not sure what the cut of meat is called. visible at 7:50

Those deer are so small and no fat what so ever. I know the deer here in the US are all different species and the one I butchered this weekend was in excess of 150lbs (our scale only went to 150) and had a ton of fat. Like 4 inches thick on the back near the rear end. In that situation do you cut all the fat off? I have always heard it has a bad taste. it was quite a pain to clean all that off.
