In the 1700's they used to save meats by packing them in a jar completely covered with fat so no air could get into it.

My great Grandmother who was born in the late 1800’s also preserved sausage this way. It was how her mother taught her.

Just wanted to check in and express my gratitude for all your wonderful videos. I've worked in Culinary for over 35 years. I started preserving food over the last 15 years and never did meat , until your amazing videos.2 months ago I tried hamburger first, with the cooking and dehydrating method. I vacuumed sealed it and checked on it weekly to make sue it was still sealed. Today I made a vegetable soup. It is absolutely amazing! Thank you so much for all you do! Much Love, in Christ.... My daughter had a turkey in her freezer for a little over a year and her husband didn’t want it because he said it was too old. So, I took it to “experiment” with a week before Thanksgiving. To my surprise, there was. I freezer burn and it tasted great! I cut it up, froze it, and I’m going to try dehydrating it as you showed us! Excited to see how it’ll turn out. (Also, made four batches of turkey bone broth with the bones, neck, etc. and got that in the freezer. Win! Win!)

Heidi, prayer is real and are answered! I just cooked a 22 lb turkey I was given through the food bank and wanted to dehydrate it. I have watched your two other videos on doing this but was still nervous, I have it in the freezer in pieces now, but could not bring my self to start it, this video just showed up and I feel empowered to know this is what I am to do and learn. Thank you. I now have a Corsori and I have wondered if I could dehydrate meat and this video is a blessing. I will be doing this from now on. Oh I use a car break tool to seal my jars. So far I've dehydrated ground venison along with various veggies. Since ive got some turkey left over I'm going to freeze and dehydrate it instead of just freezing. Next im going to tackle egg's, cheese and milk. Thanks to you and your great videos.

I dehydrated turkey last night. I also dehydrated the bones. I have a 16 year old fur baby and an 11 year old fur baby. I'm going to grind them into a powder and make dog snacks out of it and maybe sprinkle a little of the powder on their food. I never thought about dehydrating meat for any other reason. I'll definitely give it a go. Thanks for sharing how its done.

I have been watching you talk about this trick with meat and can't wait to try it. I'm glad you mentioned that you don't need to freeze when drying canned meat. I remember years ago drying some meat for backpacking and it didn't turn out well. It never wants to rehydrate properly. This should solve that problem.

I just dried 4 trays of canned chicken that we had, it came out perfectly crispy! I am going to make a soup mix tomorrow and cook it up to test it out. Planning to make soup mixes for gifts

I just cooked 7 pounds of taco meat (locally grown ground chuck with my own spice blend with herbs from my garden), and dehydrated it. It turned out great!

I have an extra pound of italian ground pork and wanted to try and dehydrate meat for the first time. Not sure how I’d use it but was thinking of some kind soup… I can dehydrate more if turns out fine and gift next christmas. thanks for the video!

I had a pound of turkey bacon, and I didn’t know what to do with it. So... I laid it out in the dehydrator until it was “jerky”. It turned out great. Then vacuumed the batch in the jar. I take what I want and then re-vac the jar.

Once I get past some of the holiday craziness, I want to try your method of drying ground meats. I want to say also, that I started buying frozen veggies and putting them straight into my dehydrator. They come out great! I buy organic, if I can. I've been using them to make homemade soup mixes you only have to add water to cook.

That's great! How do you flavour the broth? Making dehydrated soup mix was my first interest in buying a dehydrator. I just never could figure out how to go about it.

@@DonnaMM6361 I use bouillon or soup base powder, and then any herbs/spices that sound good, salt, and pepper. I don't put very much salt in, because you have to account for the salt in the bouillon.

I was so happy the first time i tried this after watching your how to video a year or so ago and i have lots of meats dried and I've had no issues, but i had to chuckle when my son, who's in his mid 20's and a great cook, thought i was crazy, for doing this and sure it was unsafe and wouldn't touch it even after i ate some that was a year old😅

i have spent the summer dehydrating veggies and now want to pull chicken out of my freezer, cook it and dehydrate it because in the winter i cook on the wood stove and my thought process is to keep all my veggies in half gallon mason jars and now i will take one jar of each veggie and a meat and fill smaller jars so i can just dump the contents of the small jar into my cast iron pan with broth or water and put it on the wood stove like a slow cooker. Instant meal !!!

Just remember the order for that chicken: Cook, freeze it again after cooked, then dehydrate it

Absolutely LOVE my off-brand jar sealing top! First one I bought was like yours, no handle - but found JUST the tops, with handles, that I bought later and use them with the manual pump that came with the first set I bought. Now I just have to save up for the vacuum chamber that Patrick builds, and maybe someone will buy me a brake bleeder pump for Christmas, maybe not, time will tell.

To dry ground beef, I cook it in a crock pot and then strain the liquid out and crumble it. Then to the dehydrator, once dry I vacuum seal it in Mylar bags with a vacuum chamber sealer. The sealer is a much better machine than a standard food sealer and the seal time is adjustable allow you to use different bags. Because the entire chamber is under a vacuum, liquids can be done and it do0esn't require special bags, which is a major cost savings. I can the liquid left over which is a combination of tallow and a very rich broth. The two separate in the jar and you are left with a quality cooking fat and a liquid useful for soups, stews, etc.

Just a word of caution I suggest vacuum sealing in 250 ml jars because it is so good before you know it “just a wee taste” becomes empty jar. 😉. The dehydrated meat makes such a protein packed delicious snack. Great for on the go snacks.

I’m finally getting a chance to watch this video. I can vouch for how good the sliced beef sausage is, along with the chicken or turkey. I have also used turkey that I canned to clear some shelf space and it comes out nice & crispy too. I prefer ground beef dehydrated to canned. I don’t really care for the texture of canned ground beef. I cook my spaghetti sauce all day and it rehydrates very good. I love how convenient it is. Thank you! Many Blessings!

I agree on the ground beef. While it is pretty tasty straight from the jar when canned, when it comes to using in soups, sauces, and more, dehydrated is better

Thank you,,,This is a great way to save my meats. I'm interested because I need a way to preserve Salmon for travel or whatever. My sweet dog has to eat salmon for her immune suppressed problems. I make all her food. I've been worried how will I feed her if we had to evacuate for fire or anything that would be quick and easy topper. I used to buy a dehydrated salmon for a topper years ago when I first started feeding my then 3 rescue dogs. I'm off feeding kibble all together now and no more vet fees and there treatments for immune suppressed dogs. My dog is so much healthier now.

I cook my ground meats, then boil it in water, changing water out 3 times, then dehydrate and store in Mylar with oxygen absorbers. I save the liquid, cook it down to a rich broth and use it for other things. The boiling nearly takes all the fat out.

Taking all the fat out also removes a lot of flavor and there is no need to do that.

@@RainCountryHomestead When I do this it’s intended for long term Mylar storage. It may not matter in 10 or 15 years regarding the fat and rancidity but I would rather not take the chance because I’m dehydrating a couple thousand dollars worth of meat for long term storage and I don’t want to risk losing it. I do have beef tallow fat storage also. I know pemmican is a legit food storage but I wonder if the fat content is not quite high enough for that type of storage in these circumstances you outline in the video. Could we crack open a jar where the fat was left in the meat 10+ years from now and not have rancidity issues?

@@giftofgabbery Yes, I understand, but what many do not understand is that when you vacuum seal (this includes using mylar and oxygen absorbers) you are preventing the oxygen exposure that causes rancidity and the fats will last for years. I know this from years of experience and my own studies

Hello, great video as always. I was wondering if you could do a video on dehydrating stock, I have tried it but I was not very happy with it. I tried vegetable stock it ended up just really sticky and could not get it off the silicon non stick sheet. Uggg Thank you for all your great work. I am just buying a dehydrator. First time doing these things. Thank you for teaching me the correct way to do this. I will be going back and watching all your videos. One question, I presume that after you take some out of a jar you already have vacuum packed, before you reseal it, you again wipe the top of the canning jar with vinegar before reaealing. Yes, you always need to make sure the top and lid are free of debris but vinegar is optional

I did try the chicken dehydrated for the first time with your suggested method of freezing then dehydrating turned out great. Thanks for the tip. Do you think that dehydrating canned tuna would work as well. I'm not a person who eats fish other than tuna.

Great video! I just got over Covid, pneumonia and sepsis so I am looking forward to getting some things done. I have a vacuum sealer, but just came into getting a fair amount of jars. Unfortunately, my vacuum sealer does have a jar attachment. Do you think it would work to use the shrink wrap seals for jars and put dehydrated food in them? I’m thinking it might be a good option until I have money for a jar sealer. Any thoughts on this and have you used the shrink wrap bands?

I do not know what you mean by shrink wrap bans for jars, never heard of that. However, setting yourself up with vacuum sealing options does not have to be expensive as covered in the video I linked to on Options for Vacuum Sealing in the description box that I suggest you check out

Really, really love the video. I have a question on the ground beef - while I do can ground beef I’m not overly fond of it because it is a bit mushy. I fry it, can it and when I open it up to “refry” the texture is just not the same or the taste. If I take my canned beef and dehydrate it will it resolve that issue? Thanks so much I will be trying lots of things from your videos!!

I did pull out a jar of canned ground beef recently and dehydrated it and it turned out good. This is one I think would rehydrate by soaking well enough for use in tacos and such

Can you do the meat at 170°? I'd like the extra space of my oven too...gonna do the leftover Turkey, how long can it sit to cool cuz I don't want it getting ANY moisture pulled back in! Do different meats require different temps? I'd like to try some canned salmon just for kicks, it'll keep canned as it is, Right?

Yes, you can, I just do not like to go that high when using silicone and no, they will all be fine at the same temperature and yes, if it was canned, no need to freeze first

If it is vacuum sealed, it can do well in most temperatures but any food storage is best if it can be kept under 70°

Yes, any dehydrator that is in working condition will dry meat. I have used my Nesco and my Cosori. If you prefer an Excalibur, then you can go that route but I personally do not see it worth the cost and the Cosori has a better design for their door than the Excalibur

Heidi a little off topic but I’ve heard you mention a time or two you were getting 1/4 beef do you mind me asking your preferred cuts and do you get to get any bones, fat or organ meat when you only purchase a 1/4? We personally do not care for organ meats and allowed the person we were sharing the side with have the bones since I make plenty enough bone broth from chicken and turkey. We prefer roasts of about any kind and ground meats. Steaks are fine too but we use roasts and ground more

I am sure it can though I would follow the same method I explained. Since it is already cooked, you would not need to cook it first but the freezing first will likely still be a good idea

May i ask a question about the vacuum sealing? What is the pump you used? Ive never heard of a pump that sucks in rather than blowing out....?

What does the reconstitued meat taste like? I have not been canning chicken breast anymore, because it tastes similar to tuna. We just didn't care for the flavour. But, we have a lot of chicken the freezer that I should do something with, to make room for beef we want to order from a local farmer. When you cook meat, it usually has some juices that run out besides the fat. Do you put that in the dehydrator too?

Can you dehydrate bacon? Cook it first like the hamburger or sausage, then dehydrate till crumbly then vac seal in glass jars?

Can I please ask could we also dehydrate store bought tin tuna, salmon etc? This would be a great way to save space as well as a grab and go if stored in mylar bags. Thank you

Hi Heidi, say we have no power, what do we do when the weather is over 100 degrees farenheight and the house is like a oven . You said keep it in coolest place can we sit the jars in water in a esky to keep cooler? Thankyou.

I do not think water is necessary and likely not even a cooler but everyone has some place in their home that stays cooler than the rest

I am sure it would work but I have not tried it as I do not eat them, especially liver. Not only do I hate it, I need to avoid it anyway as it is too high in iron
